Time 3h45m

Number Of Ingredients 11

1 1/2 Tbsp packed light brown sugar
1 1/2 Tbsp paprika
1 Tbsp cumin
1/2 tsp ground black pepper
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
4 lb beef brisket, trimmed
2 large onions thick sliced
3/4 c beer (not flavored)
1 c barbecue sauce (your favorite)

Steps:

  • 1. In small bowl mix together brown sugar, paprika, cumin, black pepper, salt, onion powder and garlic powder. Rub all over the brisket on both sides and let sit for 30 minutes.
  • 2. Preheat oven to 300 degrees. Place brisket in large roasting pan (with fat side down) and cover with sliced onions. Pour beer and barbecue sauce over the top. Cover well with aluminum foil and bake for 3 1/2 - 4 hours. You can check to see if the brisket is done by slicing off a small piece of the edge and seeing if it comes apart with a gentle tug. Remove from pan and trim any excess fat away. Brush with any extra sauce and place under broiler or on grill for 1-2 minutes. Flip and repeat for the other side. Stay close by as broilers are unpredictable.
  • 3. Cover and let rest for 20-30 minutes. Slice against the grain at a perpendicular angle. If desired serve with extra barbecue sauce.

Time 3h30m

Number Of Ingredients 7

1 Tbsp all purpose flour
1 - 5 lb fresh beef brisket
2 to 4 tsp liquid smoke
1/2 tsp celery seed
1/4 tsp pepper
1 c chili sauce
1/4 c barbecue sauce

Steps:

  • 1. Place flour in a large roasting bag; shake to coat bag. Rub brisket with liquid smoke if desired, celery seed and pepper; place in bag. Combine chili sauce and barbecue sauce; pour over the brisket. Seal in bag
  • 2. With a knife, cut six 1/2 - in. slits in top of bag. Bake at 325 for 3 1/2 to 4 hours or until meat is tender. Let stand for 5 minutes. Carefully remove brisket from bag. Thinly slice meat across the grain.

Tips:

  • Choosing the Right Brisket: Opt for a well-marbled brisket flat or point cut, as it yields the most tender and flavorful results.
  • Preparing the Brisket: Trim excess fat, leaving about ¼ inch to prevent it from drying out while cooking.
  • Seasoning and Marinating: Generously season the brisket with a flavorful rub, ensuring it penetrates deep into the meat. Marinating the brisket overnight enhances the flavors.
  • Cooking Temperature and Time: Cook the brisket at a low and slow temperature, typically between 225°F and 250°F, to achieve a tender and juicy texture.
  • Wrapping the Brisket: Wrapping the brisket in foil or butcher paper during the later stages of cooking helps retain moisture and tenderize the meat further.
  • Resting the Brisket: Allow the brisket to rest for at least 30 minutes before slicing, as this allows the juices to redistribute and results in a more succulent brisket.

Conclusion:

Baked barbecued brisket is a versatile dish that can be enjoyed in various settings, whether it's a family gathering, a backyard barbecue, or a special occasion. With careful preparation, proper seasoning, and precise cooking techniques, you can create a mouthwatering brisket that is fall-off-the-bone tender and bursting with smoky, flavorful goodness.
