1 tablespoon vegetable oil
3 cloves garlic, minced
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 1/2 cups ketchup
1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce
3 1/2 pounds chicken legs and thighs
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
  • Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.

This is a simple yet wonderful dish that's full of flavor. The meat is very moist and falls off the bone. We love to serve this dish in our home with rice and fresh corn on the cob.

Tips:

  • Choose the right chicken: Use a whole chicken cut into 8 pieces, or bone-in, skin-on chicken breasts or thighs. This will give you the best flavor and texture.
  • Make sure the chicken is well-coated in sauce: The sauce is what gives the chicken its flavor, so make sure to coat it evenly. You can use a brush or your hands to do this.
  • Cook the chicken until it is cooked through: The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit. You can check this with a meat thermometer.
  • Let the chicken rest before serving: This will help the chicken to retain its juices and flavor.
  • Serve the chicken with your favorite sides: Baked barbecue chicken goes well with a variety of sides, such as mashed potatoes, green beans, corn on the cob, or coleslaw.

Conclusion:

Baked barbecue chicken is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover chicken, and it can be served with a variety of sides. Whether you are looking for a quick and easy weeknight meal or a dish to serve at your next party, baked barbecue chicken is a great option.
