I love baked oatmeal and make many different versions, but this is one of my kids favorites. It is really easy to throw together and smells so good. We like to eat it topped with vanilla yogurt.

BANANA BREAD BAKED OATMEAL BARS

Banana Bread Baked Oatmeal Bars image

This is the perfect breakfast for those days when you really want a muffin but need something hearty and healthy like oatmeal. For the best flavor use a very ripe banana. Any fruit can be substituted for the banana, including dried fruit (cranberries!) and nuts. The bars are great the next day, too. Once cool, put the bars into the fridge, then pop them in the microwave for a few seconds before eating.

BAKED " BANANA BREAD" OATMEAL

Baked

For years I never ate oatmeal due to the "mushy" texture. After seeing a baked oatmeal prepared on FoodNetwork, it inspired me to come up with a few baked oatmeal recipes inspired by some popular baked goods. This oatmeal has a much more firm texture. Check out my recipes for Recipe #354497 and Recipe #354498.

HEALTH NUT BANANA BAKED OATMEAL

Health Nut Banana Baked Oatmeal image

This is my version of baked oatmeal with lower fat, higher protein and fiber. This is a filling and very tasty, healthy snack that is also low in sugar and fats. Yum!

Provided by TaterBug

Categories     Breakfast

Time 55m

Yield 6 serving(s)

Number Of Ingredients 11

2 cups oatmeal (regular or quick)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups nonfat milk
3 bananas, ripe (mashed)
1 teaspoon vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon
4 tablespoons Splenda Sugar Blend for Baking
1/2 cup walnuts (chopped)
2 tablespoons protein powder

Steps:

  • Preheat oven to 325 degrees F.
  • In a large bowl combine oatmeal, cinnamon, nutmeg, sugar, salt and chopped walnuts.
  • Bring milk to almost a boil add mashed bananas, vanilla, and protein powder together until well mixed.
  • Combine wet and dry ingredients together and mix well.
  • Pour into greased casserole dish.
  • Bake at 325 for 45 minutes.
  • Serve hot or chilled in bars.

Tips:

  • Use ripe bananas: Ripeness of bananas has a significant impact on the overall flavor of this dish. The sweeter the bananas, the better the baked oatmeal will taste. If you don't have ripe bananas, you can ripen them quickly by placing them in a paper bag with an apple for a few days.
  • Don't over-mix the batter: Over-mixing the batter can result in a tough, dense oatmeal. Mix just until the ingredients are well combined.
  • Adjust the sweetness: The amount of sugar or honey called for in the recipe can be adjusted to your liking. If you prefer a sweeter oatmeal, add more; if you prefer a less sweet oatmeal, add less.
  • Add your favorite toppings: Before baking, you can add your favorite toppings to the oatmeal batter. Some popular choices include nuts, seeds, dried fruit, and spices.
  • Serve warm: Baked banana oatmeal is best served warm. You can reheat it in the microwave or oven if necessary.

Conclusion:

Baked banana oatmeal is a delicious, healthy, and versatile breakfast option that can be enjoyed by people of all ages. It is a great way to start your day with a nutritious meal that will keep you feeling full and satisfied until lunchtime. With its simple ingredients and easy preparation, this recipe is sure to become a favorite in your household. Try it out for yourself and see how much you enjoy it!
