1 15 ounce can apricots
1 sleeve ritz crackers, crushed
1/4 cup brown sugar
1 stick butter (i use smart balance), melted or cut in pats

Steps:

  • 1. Preheat oven to 350 degrees. Spray 8 inch square pyrex dish, (or one of approximate size). Pour apricots with juice in dish, sprinkle brown sugar over, top with 1/2 the butter, sprinkle crushed Ritz crackers over mixture, covering well. Top with rest of the butter. Bake until mixture is bubbly and crackers are slightly browned, approximately 20-25 minutes.

1/4 cup chopped pecans
2 tablespoons finely chopped red onion
1 sheet puff pastry (from 17.3-oz package), thawed
1 round (8 oz) Brie cheese, cut horizontally in half
1 tablespoon whipping (heavy) cream or half-and-half

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper; lightly spray foil or paper with cooking spray. In small bowl, mix preserves, pecans and onion; set aside.
  • On lightly floured surface, roll pastry into 10x14-inch rectangle. Using the round of cheese as a pattern, cut a pastry circle 3 to 4 inches larger than the cheese. Set aside excess pastry.
  • Spread half of the preserves mixture in center of pastry circle, leaving 3-inch edge. Place 1 cheese round (in rind) on preserves. Spoon remaining preserves over cheese. Top with remaining cheese round.
  • Gently fold edges of pastry up and over cheese to cover, folding and pinching edges to seal. Place seam side down on cookie sheet. Cut out decorative pieces from excess pastry. Brush pastry with whipping cream; place pastry cutouts on top.
  • Bake 20 to 25 minutes or until golden brown. Serve warm.

1/2 pound dried apricots, preferably California (1 1/2 cups)
3/4 cup dry white wine
1/2 cup water
1/4 cup sugar
2 (3-inch) strips lemon zest
1 1/2 teaspoons dark rum

Steps:

  • Bring apricots, wine, water, sugar, zest, and a pinch of salt to a boil in a small heavy saucepan over medium-high heat, stirring until sugar has dissolved. Reduce heat and simmer, partially covered, stirring occasionally, until liquid is reduced and very syrupy and apricots are very soft, about 15 minutes if using California (about 45 minutes if using Turkish). (If apricots are not yet softened, pour in an additional 1/4 cup water and continue cooking.)
  • Remove from heat. Discard zest, then stir in rum. Transfer apricot mixture to a bowl and cool slightly, stirring occasionally, about 45 minutes.
  • Purée in a food processor until mixture is very smooth. Add water to purée if necessary to achieve a spreadable consistency.

3/4 cup orange juice

3/4 cup chopped nuts

Steps:

  • Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. 2 tablespoons vegetable oil
6 pounds beef brisket
1 onion, chopped
2 cloves crushed garlic
1 (1 ounce) package dry onion soup mix
1 pound dried apricots

Steps:

  • In a large heavy skillet, heat oil over medium high heat. When the oil is hot, brown the beef on all sides. If the brisket is too large, cut it in half first, and brown in two stages. Place the meat in a large Dutch oven with a lid.
  • Add onions to the drippings in the skillet. Saute over medium heat until the onions are beginning to brown. Stir in garlic, and cook for 2 or 3 more minutes. Pour over the brisket in the Dutch oven.
  • Empty one package of dry, instant onion soup mix over the browned onions and meat. Arrange all of the apricots on top of the soup mix. Pour enough water around outside of meat, not on top, to cover the sides of brisket. Cover.
  • Bake at 325 degrees F (160 degrees C) for 1 hour. Check liquid; if dish is starting to look dry, add a bit more water around meat. Cover, and cook another hour. Remove lid, and stir apricots into gravy. Leave uncovered, and cook for another hour. Stir gravy again, and add more water if the gravy is too thick. Meat should be very tender; if necessary, bake for an additional 1/2 hour. Cut across grain to serve.
