These were my favorite nachos when I lived in SoCal. Now that I live in a small city in Northern MI I've had to adapt it for locally available ingredients. A touch of Baja California in Northern Michigan...perfect!

- tortilla chips
1 can(s) crab meat, well drained
1 can(s) small shrimp, well drained
1-2 - green onions (scallions), sliced
1 small can(s) sliced black olives, or you can slice your on
8 oz package(s) mexican blend shredded cheese
- chunky salsa
- sour cream

Steps:

  • Pile tortilla chips on dinner-sized plate. Sprinkle with 1/2 the cheese. Top with crab, shrimp, sliced green onions and black olives. Sprinkle remaining cheese over all.
  • Microwave on high for 1.5-2 minutes; until cheese melts.
  • Serve with salsa and sour cream if desired.

1 jalapeno pepper, sliced
2 tablespoons diced onion
1 cup mayonnaise
1 tablespoon vinegar
¼ teaspoon cracked black pepper
¼ teaspoon garlic powder
¼ teaspoon cumin

Steps:

  • Place bell pepper, jalapeno pepper, and onion in the bowl of a food processor; puree until smooth. Stir together 4 teaspoons of this puree with the mayonnaise, and vinegar in a small bowl. 1 1/2 cups shredded cheddar cheese
1 (4 1/2 ounce) can diced green chili peppers, drained
1 (2 1/4 ounce) can sliced pitted ripe olives, drained
1/4 cup thinly sliced green onion
1/4 cup mayonnaise
1 (4 ounce) can baby shrimp, rinsed and drained
36 -40 tortilla chips

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine cheese, chili peppers, olives, green onions, and mayonnaise.
  • Gently stir in shrimp.
  • Using two 12-inch pizza pans, arrange about half of the tortilla chips. Top each chip with a teaspoon or two of the cheese-shrimp mixture.
