No Bake Baileys Irish Cream Cookie Balls Recipe - (4/5) image

3 cups vanilla wafer crumbs
1 cup powdered sugar
1/3 cup corn syrup
2/3 cup Baileys Irish Cream
12 ounce bag chocolate chips or candy melts

Steps:

  • Combine vanilla wafer crumbs and powdered sugar in a large bowl. Add corn syrup, Baileys Irish Cream and mix well. Make balls of about 2 heaping tablespoons each of the vanilla wafer mixture. Shape balls and set aside. Melt candy melts in a bowl in the microwave using short time increments of about 15-45 seconds (more explanation on how I do that above). Dip each ball into the chocolate and set on a piece of parchment paper to dry.

3 cups vanilla wafers, finely chopped
1 cup pecans, chopped
3/4 cup powdered sugar
1/2 cup bailey's irish cream
3 tablespoons light corn syrup (I use Karo)
1 1/4 teaspoons unsweetened cocoa

Steps:

  • Combine all ingredients in a bowl and mix with a wooden spoon until well blended. Allow to stand for 5 minutes.
  • Shape mixture into 1-inch balls.
  • Roll balls in powdered sugar.
  • Allow to dry on wire rack for one hour.
  • Roll in powdered sugar again, if desired.
  • Store in airtight container between layers of waxed paper.

This recipe is inspired by a number of different recipes I have tweaked according to my tastes. I love it every way you can imagine, on ice, in milkshakes, and even recently made in to my EXTREMELY homemade Baileys Irish Cream Ice Cream. Delicious

1 cup half-and-half
1 (14 ounce) can sweetened condensed milk
1 2/3 cups whiskey (I use Jameson)
1/4 cup Hersheys Chocolate Syrup
2 1/2 teaspoons almond extract
1 tablespoon instant espresso powder
1 tablespoon vanilla extract

Steps:

  • Add ingredients in blender.
  • Blend until smooth.
  • Taste (!) I usually adjust the flavor at this point, adding either more half and half, more chocolate or leaving it as is.

Tips:

  • Use high-quality chocolate for the best flavor.
  • Make sure the cream cheese is softened to room temperature so that it mixes smoothly.
  • Chill the balls for at least 30 minutes before coating them in chocolate, this will help them set and hold their shape.
  • If you want a thicker coating of chocolate, dip the balls twice.
