Steps:
- Combine vanilla wafer crumbs and powdered sugar in a large bowl. Add corn syrup, Baileys Irish Cream and mix well. Make balls of about 2 heaping tablespoons each of the vanilla wafer mixture. Shape balls and set aside. Melt candy melts in a bowl in the microwave using short time increments of about 15-45 seconds (more explanation on how I do that above). Dip each ball into the chocolate and set on a piece of parchment paper to dry.
BAILEY'S IRISH CREAM BALLS
Are these ever good!! Bet'cha can't just eat one!! These are so fabulous! Even better if you're a Bailey's lover. I sometimes make these for Easter for the grownups, and I have made these as hostess gifts. They are stunning as a Christmas gift in a pretty decorated box for next door neighbors, landlady, and just in case gifts. Yield will vary, depending on how large you shape the balls. Steps:
- Add ingredients in blender.
- Blend until smooth.
- Taste (!) I usually adjust the flavor at this point, adding either more half and half, more chocolate or leaving it as is.
Tips:
- Use high-quality chocolate for the best flavor.
- Make sure the cream cheese is softened to room temperature so that it mixes smoothly.
- Chill the balls for at least 30 minutes before coating them in chocolate, this will help them set and hold their shape.
- If you want a thicker coating of chocolate, dip the balls twice.
- Store the balls in the refrigerator for up to 2 weeks.
