Time 55m

Yield 12-16 serving(s)

Number Of Ingredients 10

6 cups all-purpose flour
3/4 cup sugar
6 tablespoons baking powder
1 teaspoon salt
1/2 cup unsalted butter
2 cups low-fat milk
1 cup water
4 whole eggs
1/4 cup vegetable oil
1/4 cup melted butter

Steps:

  • Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
  • In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. Add in the eggs, vegetable oil, milk and water and mix well with a spoon until the texture of your mixture is between that of a bread dough and the batter of a cake mix, adding more water if necessary.
  • Pour mixture into greased pan and bake for 30mins. Brush the melted butter over the top and continue to bake for another 15 mins or until golden brown and butter knife comes out clean from the middle.
  • Cut in squares and serve warm with butter or jam.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your bread.
  • Don't overmix the batter. Overmixing will make the bread tough.
  • Grease and flour the loaf pan before baking. This will help the bread to rise evenly and prevent it from sticking to the pan.
  • Bake the bread until a toothpick inserted into the center comes out clean. Overbaking will make the bread dry.
  • Let the bread cool completely before slicing and serving. This will help the bread to set properly.

Conclusion:

Bahamian coconut bread is a delicious and easy-to-make bread that is perfect for any occasion. With its moist texture, sweet flavor, and hints of coconut, this bread is sure to be a hit with everyone who tries it.
