BACON-WRAPPED TUNA STEAKS
This recipe came from my husband's cousin, who fishes for tuna off the Oregon coast each summer. The bacon helps hold the tuna together on the grill, and adds a nice moistness to the lean albacore meat. You could try it with other types of tuna, but I've only ever used albacore.

Steps:
- Take as many bacon strips as you have tuna steaks, and lay bacon on a paper-towel lined plate. Microwave 2-3 minutes or until bacon is about half-cooked but still very pliable.
- Preheat outdoor grill to medium-high.
- Meanwhile, wrap a slice of cooled bacon around the perimeter of each tuna steak and secure to itself and to the fish with a toothpick or two. Depending on the size of your steaks, you might have to squeeze a bit to get the bacon to reach around, but a snug fit will hold the fish together when it shrinks during cooking.
- Sprinkle both surfaces of tuna steaks with garlic powder & seasoned salt. Spray both sides lightly with cooking spray to prevent sticking to grill. (You can also use a fish grilling grid or basket).
- Grill until fish is lightly browned and bacon is starting to crisp, about 5-7 minutes per side for well-done (I don't like any pink in my fish).
- Note: I use the low-sodium Kirkland brand bacon that Costco sells, and Mazola Pure olive oil spray.

TUNA WITH WASABI SAUCE
Wasabi mayonnaise can be found in the Asian section of your local supermarket. Wasabi, an Asian plant similar to horseradish, has a fiery flavor. Add some plain mayonnaise to make a milder sauce.

SEARED TUNA WITH WASABI-BUTTER SAUCE
I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

Tips:
- Choose high quality tuna steaks. Look for steaks that are thick and evenly cut, with a bright red color. Avoid steaks that are thin, discolored, or have a slimy texture.
- Wrap the tuna steaks in bacon tightly. This will help to keep the tuna moist and flavorful during cooking.
- Cook the tuna steaks over medium heat. This will help to prevent the bacon from burning and the tuna from overcooking.
- Use a meat thermometer to check the doneness of the tuna steaks. The internal temperature of the tuna should be 145 degrees Fahrenheit for medium-rare, 150 degrees Fahrenheit for medium, and 155 degrees Fahrenheit for well-done.
- Make the wasabi cream sauce while the tuna steaks are cooking. This will allow the flavors to meld together.
- Serve the bacon-wrapped tuna steaks with the wasabi cream sauce immediately. This dish is best enjoyed hot.
