½ cup chopped red bell pepper
½ cup chopped celery
½ cup chopped onion
2 cups stuffing mix (such as Kraft® Stove Top®)
½ (8 ounce) package softened cream cheese, cut into chunks
¼ cup softened butter, cut into chunks
1 egg, beaten
⅔ cup very hot water
⅔ cup bread crumbs, or as needed
6 slices bacon, or more to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add red bell pepper, celery, and onion; cook and stir until softened, 5 to 10 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).

2/3 c finely chopped onions
2 Tbsp butter
1 box stove top stuffing
1/4 c finely chopped celery
1/2 tsp minced garlic
1 pinch salt
1 pinch pepper
1 large egg, beaten
12 slice or more bacon

Steps:

  • 1. In a small skillet, sauté onion,and celery in butter until tender. In a large bowl, combine the Stove Top Stuffing,and remaining seasonings;toss to mix evenly. Add onion mixture, and egg ; toss lightly to coat bread mixture.
  • 2. Roll mixture into 1 1/4- inch balls. Wrap a bacon strip around each ball. Secure with a toothpick. Repeat with remaining ingredients.(here is where you may need more bacon slices(it depends on how big you make the balls). I like to make small ones and use the whole pound of bacon. These freeze well, after baked and cooled.
  • 3. In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a meat thermometer inserted into stuffing reads at least 160^. Drain on paper towels. Makes 12 or more.

6 slices Bacon, cut in half

  • 1.Preheat oven to 350 degrees Fahrenheit. 2. If using homemade stuffing proceed to step 3. If using boxed stuffing, cook according to package directions.Remove from stove and let cool for 5 minutes. 3. Use a cookie scoop to create stuffing balls or roll 2 Tablespoons of stuffing mixl into 2-inch balls 4. Wrap with 1/2 slice bacon and secure with a toothpick 5. Place stuffing balls on baking sheet lined with parchment paper and bake for 15-18 minutes or until bacon is crisp and top of stuffing is lightly browned. 6. Wrap with 1/2 slice bacon and secure with a toothpick 7. Transfer to serving platter and enjoy!
