Sunday is grill-out day for my husband, Cliff, and these bacon-wrapped stuffed jalapenos are one of his specialties. We usually feature them at our annual Daytona 500 party. They disappear from the appetizer tray in no time.

CREAM CHEESE STUFFED JALAPENOS WRAPPED IN BACON
Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

Steps:
- Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
- In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
- Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
- Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
- Enjoy!

PAULA DEEN'S BACON WRAPPED STUFFED JALAPENOS
A Paula Deen recipe posted for safekeeping. Peppers can be stuffed up to one day ahead. Store, covered, in the refrigerator. Bake just before serving. After Chef Jean's review I have made and revised this.

Steps:
- Preheat oven to 425 degrees.
- She says line a rimmed baking sheet with parchment paper. But I would set them on a baking rack in the rimmed baking sheet to get them out of the grease although they are harder to get out that way.
- Cut a lengthwise slit down center of each pepper.
- Cut a crosswise slit at top of each pepper to form a T.
- Carefully remove seeds from inside of peppers, leaving peppers intact.
- In a large bowl, combine black beans, corn, both cheeses, chili powder, and cumin.
- Spoon about 1 1/2 tablespoons bean mixture evenly into each jalapeno.
- Fold bacon half slice around each jalapeno.
- Secure with wooden picks, if needed.
- Bake for 15 minutes or until bacon is cooked through.
- Serve immediately.
SPICIER, CHEESIER STUFFED JALAPENOS WRAPPED IN BACON
I never liked the thought of cream cheese in my jalapeno poppers so this variation uses sticks of Tillamook® pepper Jack cheese to turn up the heat and flavor. Your friends will love this if they can handle the heat.

Steps:
- Slice caps off the jalapeno peppers; reserve. Core and seed the peppers.
- Cut pepper Jack cheese into 1/4-inch-thick slices. Cut each slice into sticks the thickness of a pencil. Stuff jalapeno peppers with as many cheese sticks as will fit. Secure caps back on the jalapenos, using at least 2 toothpicks per pepper.
- Wrap 1 slice bacon around each jalapeno pepper. Keep bacon secure by skewering the end on one of the toothpicks.
- Preheat grill for medium heat and lightly oil the grate. Grill jalapeno peppers, watching for flare-ups, until bacon is browned, about 20 minutes.

Steps:
- 1. Slice jalapenos in half and dig out seeds and veins. (I use the tip of a carrot peeler)
- 2. Fill the "cup" of the jalapeno with cream cheese (you can add cheddar cheese to the cream cheese too if you prefer)
- 3. If you have long slices of bacon, cut them in half. Then wrap bacon all the way around the jalapeno.
- 4. Place wrapped jalapeno on a pan covered with tin foil and sprayed with non stick cooking stray. (If you have a wire rack, place it on top of the pan to keep the jalapenos out of the grease)
- 5. Bake @ 300-350 until bacon is fully done.
BACON WRAPPED STUFFED HABANEROS / JALAPENOS
Im sure this recipe has been done many times before, but I started making it several years ago with some friends. Simple, though a little bit labor intensive, and, if you like hot peppers, delicious!! We like spicy, so I sometimes substitute a few habaneros to heat it up a little more. (Not for everyone!!!!!!)

Steps:
- Pre-Heat oven to 325.
- Start by washing the jalapenos, cutting the stem off, and then cutting them in half lengthwise.
- Next, devein and remove the seeds. ( I leave in for extra heat)
- Now you are ready to stuff the peppers with cream cheese. Using a knife cut about a quarter of an inch slice of cream cheese, short side, and then smooth it into the pepper.
- After this step is completed, you are ready to wrap them in bacon. I usually cut about half of the pack of bacon in half and use the full strips for the larger peppers. Now just start wrapping. If wrapped from one end to the other moderately tight, no toothpicks are needed to hold the bacon on.
- This method should use just about all of the cream cheese and all of the bacon.
- Now put them in the oven and bake for about 25 to 30 minutes. Check them periodically as oven temps vary. They are ready when the bacon is firm, not crisp and the cheese is slightly brown. Enjoy!

Steps:
- Slowly cook bacon on a cool part of the grill turning over once until cooked through but still pliable. Thinly sliced bacon and quick cooking will crisp the bacon. Cut jalapenos in half lengthwise. Scoop out seeds and membranes. Fill each half with goat cheese mounding it slightly. Cut each piece of bacon in half. Wrap one piece of cooked and cooled bacon around each pepper half and sprinkle with chives. Place on a sheet of aluminum foil on a medium hot grill until the jalapeno is slightly charred. Serve. Note: Bacon can also be cooked on a grill pan on the stove top and the stuffed and wrapped peppers placed on a cookie sheet in a 350 degree oven until peppers soften slightly.

Tips:
- Choose the right jalapenos: Look for firm, deep green jalapenos with no blemishes. Avoid any that are bruised or have soft spots.
- Wear gloves when handling jalapenos: The capsaicin in jalapenos can irritate your skin, so it's best to wear gloves when you're handling them. If you do get capsaicin on your skin, wash it off with soap and water immediately.
- Remove the seeds and ribs from the jalapenos: This will help to reduce the heat level of the peppers. You can do this with a knife or a spoon. If you're using a knife, be careful not to cut yourself.
- Stuff the jalapenos with your favorite fillings: There are endless possibilities for fillings, so get creative! Some popular options include cheese, meat, vegetables, and rice.
- Wrap the jalapenos in bacon: This will help to keep the fillings in place and add a delicious smoky flavor. Make sure to wrap the jalapenos tightly so that the bacon doesn't fall off.
- Bake the jalapenos until the bacon is cooked and the peppers are soft: This will usually take about 20 minutes. Keep an eye on the jalapenos so that they don't overcook.
- Serve the jalapenos hot or cold: They're delicious either way! You can also drizzle them with your favorite sauce, such as ranch dressing or barbecue sauce.

Bacon-wrapped stuffed jalapenos are a delicious and easy appetizer that is perfect for any party or gathering. They're also a great way to use up leftover jalapenos.
