16 large shrimp, peeled and deveined
8 slices bacon
barbeque seasoning, to taste

Steps:

  • Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
  • Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

1 lime, juiced and zested
1 tablespoon toasted sesame oil

12 slices center cut or applewood smoked bacon, cut in 1/2

3 scallions, very thinly sliced on an angle

Steps:

  • Preheat oven to 425 degrees F.
  • Place shrimp and scallops in a shallow dish or bowl. Dress seafood with lime juice and zest, a generous drizzle of sesame oil, grill seasoning and hot pepper flakes. Wrap each shrimp and scallop with a half slice of bacon. Wrap each shrimp working from head to tail, pulling bacon snuggly around the shrimp. Wrap the bacon around the outside of each scallop. Fasten bacon in place as necessary with picks.

3 tablespoons mayonnaise

12 jumbo shrimp (U10s), shelled and deveined

Steps:

  • Position an oven rack in the top of the oven and preheat the broiler to high.
  • Add the crab, breadcrumbs, mayonnaise, parsley, lemon zest and juice, garlic, 2 tablespoons of the steak sauce and 1/2 teaspoon salt to a large bowl and stir until well combined.
  • Cut a deep slit down the ridged back of each shrimp and open it up like a book. Put the shrimp on a baking sheet and press the tails down firmly so they lay flat. 3 scallions, tops and whites finely chopped
1/2 red bell pepper, finely chopped
1/4 cup mayonnaise
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon table salt
Pinch cayenne pepper
16 large shrimp, peeled
16 slices bacon
2 lightly packed cups fresh basil
1 cup walnuts
1 cup freshly grated Parmesan
1 tablespoon minced fresh garlic
1 cup olive oil
1/4 cup fresh lemon juice
1 cup all-purpose flour
8 tablespoons butter
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon minced onion
1 teaspoon minced fresh garlic
1/4 cup dry white wine
1 cup heavy cream
3 tablespoons pesto (see recipe above)
1 teaspoon roux (see recipe above)

Steps:

  • Preheat the oven for 350 degrees F.
  • To make the crab stuffing: Combine the crab, crackers, scallions, pepper, mayonnaise, egg, Worcestershire sauce, mustard, lemon, and garlic. Season the stuffing with salt and pepper and mix well. Set the stuffing aside.
  • Using a paring knife, slice the shrimp down the backs and remove and discard the 'veins'. Deepen the incisions if necessary, then spoon stuffing into each shrimp. Wrap each stuffed shrimp with bacon and arrange them in a large baking dish.
  • To make the pesto: pulse the basil, walnuts, cheese, and garlic together in a food processor (or grind in a mortar) then gradually incorporate the oil. Adjust the seasoning with lemon juice and set aside.
  • To make the roux: Heat the butter in a saucepan over medium heat. Add the flour, and cook, stirring, until the mixture, although still pale, looks dryer and no longer smells raw, about 5 minutes. Remove the roux from the heat.
  • Transfer the shrimp to the oven and roast until the bacon begins to render and brown, about 10 minutes. Flip the shrimp and roast on the second side until the shrimp are opaque, 5 to 10 minutes more.
  • Meanwhile, make the lemon basil cream: Heat the oil and butter in a small skillet over medium heat. Add the onions and garlic and cook, stirring frequently, until the mixture is fragrant and golden, about 7 minutes. Add the wine and simmer for 5 minutes then add the cream. Simmer until the sauce has reduced by half. Add the lemon juice and pesto, then whisk in the roux a tablespoon at a time (use just enough to thicken the sauce). Keep the sauce warm over very low heat.

12 fresh jalapenos, the largest you can find
12 fresh, jumbo sized shrimp, shells off, de-veined
12 oz Monterrey Jack cheese or other soft melting cheese, sliced into 12 sticks
12 strips regular fatty bacon (not center cut or thick sliced)

Steps:

  • Prepare your grill for medium heat. Sorry non-grill folks, you can try making these in the oven but they just don't turn out as nicely. Wearing gloves, slice the jalapenos lengthwise without breaking all the way through. Make small cuts at the stem and tip so that you can open up the jalapeno without breaking it up too much. Use a small paring knife or spoon to scrape out all of the inside seeds and membranes. Clean them out really well unless you like a super hot popper. Insert a stick of cheese into the pepper. Next wedge as much of the shrimp into the jalapeno as possible with the tail end sticking out. Depending on the size of your shrimp and the size of your jalapenos this might be easy or hard. If there is not enough room just get as much of the shrimp in as you can. The bacon wrapping will hold them together. Wrap the shrimp and jalapeno tightly with a strip of bacon, stretching and overlapping slightly as you go. Secure the bacon with a toothpick. Repeat. Grill poppers until bacon is crisp and browned all over, turning as needed. The bacon fat will melt off and some cheese may melt out so watch for flare-ups.

One 1-pound box linguine, cooked

6 slices good-quality thick-cut bacon
6 medium to large raw shrimp, peeled and deveined

Steps:

  • In a large food processor, blend the chipotles, garlic, Worcestershire, tomatoes, beer and cilantro.
  • Add the puree to a nonstick skillet and heat until the sauce bubbles.
  • Making 2 servings at a time, heat 1 stick butter with 2 teaspoons habanero in a large skillet. When the butter is melted, add one-third of the pasta and one-third of the Diablo sauce. Mix together for 20 seconds, remove from the heat and reserve. Repeat 2 more times.

1/2 cup mayonnaise
1 tablespoon minced shallot
1/2 teaspoon dried tarragon, crushed
1 1/2 teaspoons red wine vinegar
1/8 teaspoon fresh ground pepper
16 large shrimp, peeled, deveined, with the tail segment left on
8 slices smoked bacon, cut crosswise in thirds
16 wooden toothpicks, soaked in water for 20 minutes and drained

Steps:

  • For the béarnaise sauce: Combine the mayonnaise, shallots, tarragon, vinegar and pepper in a small bowl.
  • Cover and let stand at room temperature to blend the flavors, at least 1 hour.
  • Wrap a bacon strip around each shrimp, securing the bacon with a toothpick.
  • Broil: 5 minutes until bacon starts to crisp.
  • Turn shrimp and broil another few minutes until bacon is crisp all the way, remove and drain on paper towels.

Steps:

  • Preheat oven to 475 degrees, with rack in upper third. Cut bacon slices in half crosswise and wrap each piece around a shrimp; secure with a toothpick. In a large bowl, whisk together soy sauce, ginger, and sugar. Add bacon-wrapped shrimp to soy sauce mixture and toss to coat. Arrange in a single layer on a rimmed baking sheet. Bake 10 minutes. Turn on broiler and broil until bacon is sizzling and crisp at edges and shrimp are cooked through, 2 to 3 minutes. Serve warm or at room temperature.

1/2 cup reduced-fat mayonnaise

FOR SHRIMP
Wooden cocktail picks at least 3 inches long
Vegetable oil cooking spray
1 pound extra-large shrimp (about 20-25 count per pound), peeled and cleaned; tails intact
Zest and juice of 1 lime
2 teaspoons chili powder
Salt and black pepper to taste
1 tablespoon olive oil
10 to 15 slices apple-wood-smoked (or favorite) bacon, halved crosswise

Steps:

  • In a small bowl, stir together all the sauce ingredients. Cover and chill at least 1 hour. Before serving, let sauce rest at room temperature 20 minutes so flavors meld. Preheat oven to 375 degrees. Soak cocktail picks in water 30 minutes. Line a baking sheet with foil and coat with nonstick spray. Set aside. Put shrimp, lime zest and juice, chili powder, salt, pepper and oil in a bowl. Toss gently. Cover and refrigerate at least 15 minutes and up to 1 hour. Remove picks from water. Wrap each shrimp with half a slice of bacon and secure with a pick. Put skewers on prepared baking sheet and bake about 15 minutes, turning skewers about halfway through. Turn on the broiler and broil 5 minutes. Remove from the oven. Serve with dipping sauce
