Time 1h10m

Number Of Ingredients 6

24 slice good quality bacon
4 oz cream cheese
1/2 c whole milk ricotta cheese
1/2 tsp tabasco sauce
24 large sage leaves, fresh
48 large pitted prunes

Steps:

  • 1. Partially cook bacon slices in microwave for 1-1/2 minutes on full power. This renders the fat and begins to shrivel the bacon. Cool.
  • 2. Blend cream cheese, ricotta, tabasco and sage in a food processor until smooth and well blended. Using a small spoon or butter knife stuff cheese mixture into the prune openings. Round cheese on top of the prune opening.
  • 3. Cut bacon slices in half lengthwise and wrap each slice around a cheese stuffed prune.
  • 4. Refrigerate until ready to serve. Preheat oven to 450 degrees. Place prunes on a baking sheet and bake for approx. 7 minutes or until bacon is crisp. Allow to cool for at least 5 minutes before serving (they will be extremely hot directly from the oven and can burn tongues!)
  • 5. Prunes can be prepared a couple of days in advance and refrigerated. Delicious!!

Tips:

  • Choose ripe, firm prunes for the best results. Avoid prunes that are too soft or mushy.
  • Slice the bacon thinly so that it cooks evenly. You can use regular bacon or thick-cut bacon, depending on your preference.
  • If you're using toothpicks to secure the bacon-wrapped prunes, be sure to soak them in water for at least 30 minutes before using. This will help to prevent them from burning.
  • Cook the bacon-wrapped prunes over medium heat so that the bacon has time to render and crisp up. Don't overcrowd the pan, or the bacon won't cook evenly.
  • Serve the bacon-wrapped prunes immediately with your favorite dipping sauce. They're also great as an appetizer or snack.

Conclusion:

Bacon-wrapped prunes are a delicious and easy-to-make appetizer or snack that are perfect for any occasion. They're also a great way to use up leftover bacon. With just a few simple ingredients, you can create a dish that is both sweet and savory. So next time you're looking for a quick and easy snack, give bacon-wrapped prunes a try. You won't be disappointed!
