I received this recipe for bacon-wrapped potatoes years ago from a friend. It's a delicious new twist to a baked potato. I recently served these potatoes to visiting relatives from Norway, and they were a big hit. I love to cook and even wrote my own cookbook several years ago. -LaVerna Mjones, Moorhead, Minnesota

1 pound boiling potatoes
1 onion, chopped fine (about 1/2 cup)
1 garlic clove, minced
2 scallions, sliced thin
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • In a skillet cook the bacon over moderate heat, stirring, for 5 minutes, or until it is crisp, transfer it to paper towels to drain, and in the fat remaining in the skillet cook the potatoes, peeled, sliced thin, and patted dry, and the onion, covered, stirring occasionally, for 5 minutes, or until the potatoes are browned. Reduce the heat to moderately low, stir in the garlic, and cook the mixture, uncovered, stirring occasionally, for 15 minutes. Stir in the bacon, the scallions, the parsley, and salt and pepper to taste and cook the mixture, covered, stirring occasionally, for 5 minutes, or until the potatoes are tender.

Tips:

  • Choose the right potatoes: For this recipe, small, firm potatoes like baby potatoes or fingerling potatoes work best. They will hold their shape well when wrapped in bacon.
  • Parboil the potatoes: Parboiling the potatoes before wrapping them in bacon will help them cook through evenly. Be sure to drain them well before wrapping so that the bacon doesn't get soggy.
  • Use a good quality bacon: The type of bacon you use will make a big difference in the flavor of the dish. Look for a thick-cut, hardwood-smoked bacon that is not too salty.
  • Wrap the potatoes tightly: When wrapping the potatoes in bacon, be sure to wrap them tightly so that the bacon doesn't fall off during cooking.
  • Bake the potatoes at a high temperature: Baking the potatoes at a high temperature will help the bacon get crispy and the potatoes will cook through quickly.
  • Make the honey scallion sauce while the potatoes are baking: This will allow the flavors to meld together and create a delicious sauce for the potatoes.

Conclusion:

Bacon-wrapped potatoes with honey scallion sauce is a delicious and easy-to-make appetizer or side dish.
