JO'S BACON-WRAPPED MEATLOAF

Jo's Bacon-Wrapped Meatloaf image

Provided by Food Network

Time 1h55m

Yield 6 to 8 servings

Number Of Ingredients 16

4 cups panko breadcrumbs
12 ounces whole milk
1 1/2 cups shredded Pecorino-Romano
1 1/2 tablespoons Worcestershire sauce
1 teaspoon freshly ground pepper
1 teaspoon kosher salt
6 large eggs, beaten
2 pasilla chile peppers, diced
1 1/2 bunches fresh Italian parsley, minced
2 pounds grass-fed ground beef
1 cup ketchup
1/2 cup dark brown sugar
2 teaspoons dry mustard
3 dashes hot sauce, such as Tabasco
9 slices extra-thick applewood-smoked bacon
Nonstick cooking spray, for the pan

Steps:

  • Preheat oven to 375 degrees F.
  • Combine panko, milk, pecorino, Worcestershire sauce, pepper, salt, eggs, pasilla chiles and Italian parsley in a large mixing bowl and mix well. Add the ground beef and hand-mix until well blended. Set aside.
  • To make the glaze, combine ketchup, brown sugar, dry mustard and hot sauce in a small mixing bowl. Stir well using a rubber spatula. Set aside.
  • Lay bacon down slightly overlapping side-by-side in a half-sheet pan. Spray a 9-by-4-inch loaf pan that's 6 inches high with nonstick spray. Place the beef mixture in the pan and pat down to form a meatloaf. Turn pan over and tap out the meatloaf into your hand. Place the meatloaf over the center of the bacon slices. Working with one slice at a time, fold ends of each bacon slice over the top of the meatloaf. Turn loaf over and place on a rack set in a baking sheet to allow the fat to drain while baking.
  • Using the rubber spatula, spread half the glaze over the meatloaf. Bake for 1 hour, then apply remaining glaze. Continue to bake until the internal temperature reaches 165 degrees F, about another 20 minutes.

BACON WRAPPED MEATLOAVES

Bacon Wrapped Meatloaves image

Provided by Molly Yeh

Categories     main-dish

Time 1h10m

Yield 6 meatloaves

Number Of Ingredients 16

2 slices rye bread, tough crusts removed, bread crumbled (about 1 cup)
1/3 cup milk
1 large egg, beaten
1/2 medium onion, finely chopped (about 1/2 cup)
1/4 cup chopped fresh Italian parsley
1 teaspoon dry mustard
1/2 teaspoon ground caraway
1/2 teaspoon ground coriander
12 ounces ground beef (90/10)
8 ounces ground pork
Kosher salt and freshly ground black pepper
2 tablespoons ketchup
2 tablespoons steak sauce
1 tablespoon Dijon mustard
1 tablespoon light brown sugar
6 slices center cut bacon

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the bread in a large bowl and pour the milk over. Let soak a few minutes, then squeeze through your fingers to combine. Add the egg, onion, parsley, dry mustard, caraway and coriander and mix well. Add the ground beef, ground pork, 1 1/4 teaspoons salt and several grinds of pepper. Mix well with your hands to combine.
  • In a small bowl, stir together the ketchup, steak sauce, mustard and brown sugar.
  • Divide the mixture into 6 equal portions and form into balls. Wrap each ball with 1 strip of bacon. Place, without touching, on a rimmed baking sheet or in a large braiser. Brush with a light coating of the glaze. Bake until the fat from the bacon has rendered, about 20 minutes.
  • Increase the oven temperature to 425 degrees F.
  • Brush the meatloaves with the remaining glaze. Continue to bake until the meatloaves are cooked through, the bacon is crisp and the glaze is shiny, 15 to 20 minutes more. Remove to a platter or plates to serve, leaving the drippings behind. (Save drippings for the Cheesy Mashed Potatoes & Gravy.)

SWISS, BACON, MUSHROOM MEATLOAF

Swiss, Bacon, Mushroom Meatloaf image

Swiss cheese with mushrooms & bacon is my favorite burger topping. So I thought why not make it a meat loaf. I had a lot of fresh herbs on hand so I used them but you could sub dry ones. I put a lot of vegetables in it and that keeps it moist. You can double it if you want very easily.

Tips:

  • Choose the right mushrooms. Baby bella mushrooms are a good option because they are small and have a mild flavor. You can also use cremini or white button mushrooms.
  • Use a sharp knife to slice the mushrooms. This will help prevent them from tearing.
  • Cook the mushrooms until they are softened. This will help them release their flavor and moisture.
  • Wrap the mushrooms in bacon tightly. This will help keep them from falling apart.
  • Bake the meatloaf at a high temperature. This will help create a crispy crust on the outside and a juicy interior.
  • Let the meatloaf rest before slicing. This will help the juices redistribute throughout the loaf.

Conclusion:

Bacon-wrapped mushroom meatloaf is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover mushrooms and bacon, and it is a surefire hit with everyone who tries it. So next time you are looking for a new and exciting recipe, give bacon-wrapped mushroom meatloaf a try!
