VENISON MEATLOAF

This mince loaf with sausage, bacon and game meat is as good cold as it is hot. Serve it with our fruity Cumberland sauce

Provided by Barney Desmazery

Categories     Main course, Starter

Time 1h40m

Number Of Ingredients 9

12 thin rashers streaky bacon
1kg minced venison
1 small onion , finely chopped
2 good-quality pork sausages , meat squeezed from the skins
1 tbsp fresh thyme leaves, plus sprigs to decorate
50g fresh breadcrumb
1 tbsp wholegrain mustard
splash of Worcestershire sauce
1 egg

Steps:

  • Heat oven to 200C/180C fan/gas 6. Stretch out the bacon with the back of a knife, then trim off and finely chop any stray bits. Line a 900g loaf tin with the bacon, leaving an overhang, and set aside. Tip the rest of the ingredients into a bowl and scrunch well with your hands.
  • Pack the mix into the tin, pat down well and wrap over the bacon. Put the tin on a tray and bake in the middle of the oven for 1 hr 15 mins or until firm and cooked through. Leave to rest for at least 15 mins, then serve sliced - or leave to cool completely and serve sliced cold for a buffet with salad, or stuffed into a roll. Either way, Cumberland sauce is a must (see tip, below).

Tips:

  • Choose the right venison: Use ground venison that is fresh and has a good amount of fat content. This will help keep the meatloaf moist and flavorful.
  • Don't overmix the meat: Overmixing the meat will make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use a variety of spices: Don't be afraid to experiment with different spices. The recipe provided is a good starting point, but you can add or adjust the spices to your liking.
  • Cook the meatloaf at a low temperature: This will help prevent the meatloaf from drying out. Cook the meatloaf at 350 degrees Fahrenheit for 1 hour and 15 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10-15 minutes before slicing. This will help the meatloaf hold its shape and make it easier to slice.

Conclusion:

Bacon-topped venison meatloaf is a delicious and easy-to-make dish that is perfect for any occasion. The venison is lean and flavorful, and the bacon adds a crispy and smoky flavor. The meatloaf is also very moist and juicy, thanks to the addition of eggs, breadcrumbs, and milk. When you follow the simple tips above, you can easily make a bacon-topped venison meatloaf that your family and friends will love.
