SAUTEED BRUSSELS SPROUTS WITH BACON AND ONIONS

Sauteed Brussels Sprouts with Bacon and Onions image

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

Rachael Ray pairs Brussels sprouts with bacon in this simple but tasty recipe from 30 Minute Meals on Food Network.

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 6

3 slices bacon, chopped
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 shallot, chopped
1 1/2 pounds Brussels sprouts, trimmed, small sprouts left whole, larger sprouts halved
Salt and pepper, to your taste
1 cup chicken broth

Steps:

  • Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth. Bring broth to a bubble, cover and reduce heat to medium low. Cook 10 minutes, until tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.

Tips:

  • Choose fresh Brussels sprouts: Look for firm, bright green sprouts with tightly closed leaves.
  • Trim the sprouts: Cut off the stem end and any wilted or discolored leaves.
  • Parboil the sprouts: This helps to tenderize them and reduce their bitterness.
  • Use thick-cut bacon: This will provide more flavor and texture to the dish.
  • Cook the bacon until it's crispy: This will help to render out the fat and make the bacon more flavorful.
  • Add the sprouts to the bacon fat: This will help them to brown and caramelize.
  • Season the sprouts: With salt, pepper, and garlic powder.
  • Roast the sprouts until they're tender and slightly charred: This will take about 15-20 minutes.
  • Garnish with fresh herbs: Such as parsley or chives.

Conclusion:

Bacon-topped Brussels sprouts are a delicious and easy side dish that can be enjoyed by people of all ages. They're perfect for a weeknight meal or a special occasion. With a few simple ingredients and a little bit of time, you can create a dish that's sure to impress your family and friends.
