Number Of Ingredients 9

8 slices bacon, chopped
2 tbsp butter
1/3 of a 900g pkg spaghetti
4 eggs, beaten
1/2 cup grated parmesan cheese
1/3 cup chopped fresh parsley
2 large tomatoes, seeded, sliced
salt & pepper
additional grated parmesan cheese

Steps:

  • In large frypan cook bacon until crisp. Drain, reserving 2 tbsp drippings. Set bacon aside. Combine drippings and butter, set aside. In large saucepan, cook spaghetti according to package directions; drain, return to saucepan. Add butter mixture, eggs, cheese and parsley tossing to combine. Cook and stir over low heat until mixture is creamy and slightly thickened. Stir in tomatoes. Add salt and pepper to taste. Serve immediately sprinkled with additional parmesan cheese.

Tips:

  • Use high-quality ingredients: Fresh, ripe tomatoes, flavorful bacon, and al dente spaghetti will make all the difference in this dish.
  • Don't overcrowd the pan: When cooking the bacon, make sure to give it enough space so that it can crisp up properly. If you overcrowd the pan, the bacon will steam instead of fry and will be limp and chewy.
  • Cook the tomatoes until they burst: This will release their natural sweetness and flavor. You can also add a pinch of sugar to help balance out the acidity of the tomatoes.
  • Don't overcook the spaghetti: Al dente spaghetti is slightly firm to the bite and has a nice chew to it. If you overcook the spaghetti, it will become mushy and bland.
  • Garnish with fresh herbs: A sprinkling of chopped basil, parsley, or oregano will add a pop of freshness and flavor to the dish.

Conclusion:

Bacon tomato spaghetti is a quick and easy weeknight meal that is sure to please the whole family. It is a simple dish, but the combination of flavors and textures is simply irresistible. The crispy bacon, sweet tomatoes, and al dente spaghetti are a perfect match, and the fresh herbs add a touch of brightness and freshness.
