BACON & TOMATO PASTA SALAD

Bacon & Tomato Pasta Salad image

Fresh and satisfying, creamy and crunchy! We love the bacon flavor (of course) and are thinking about adding grilled chicken the next time we make it! Yum.

Time 30m

Number Of Ingredients 9

1 box rotini pasta, 1 lb.
4-5 green onions, chopped
1 pt cherry tomatoes, halved
1 1/4 c celery, diced
1 1/4 c mayonnaise
5 tsp white vinegar
1 Tbsp sugar
1 lb cooked bacon, crumbled
salt & pepper to taste

Steps:

  • 1. Cook pasta according to package directions. Drain and rinse in cold water.
  • 2. In large bowl, combine pasta, green onions, tomatoes and celery. (I didn't have celery today, so I used celery seed instead)
  • 3. In a small bowl, combine mayonnaise, vinegar, sugar, salt & pepper, then pour over pasta mixture. Cover and chill.
  • 4. Just before serving, add bacon.

Tips:

  • Choose ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your pasta salad will be.
  • Use a variety of pasta shapes: This will add visual interest and texture to your salad.
  • Don't overcook the pasta: Al dente pasta is best for pasta salad, as it will hold its shape and won't get mushy.
  • Let the pasta cool before assembling the salad: This will prevent the pasta from absorbing too much dressing and becoming soggy.
  • Use a light dressing: A heavy dressing will weigh down the salad and make it less refreshing.
  • Add some fresh herbs: Herbs like basil, oregano, and parsley will brighten up the flavor of your salad.
  • Serve the salad chilled: Pasta salad is best served chilled, so make sure to give it plenty of time to cool in the refrigerator before serving.
