I made these up one night when I was confronted with a pound of ground beef and didn't want to make either burgers or tacos ... so why not combine the two? I used the white corn taco shells that come 12 in a 4.6 oz. box so they're kind of small; if you use larger shells the yield will be less; yield also depends on how much you fill 'em up! Also, a little of the tangy "taco sauce" I created goes a long way.

1 1/4 lbs ground beef (preferably ground sirloin)
4 slices bacon, diced
2 green onions, sliced,white and part of green
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon liquid smoke (I use hickory)
6 tablespoons ketchup
3 teaspoons ballpark mustard
1 1/2 teaspoons chili powder
12 small taco shells (12 to a 4.6 oz. box; use a different size if you like)
lots of shredded sharp cheddar cheese
lettuce
tomatoes
onion

Steps:

  • In a saucepan, cook the diced bacon until lightly crisp; pour off all but about a half tablespoon of bacon grease.
  • Add ground beef and green onions and cook together until beef is thoroughly cooked through, then stir in chili powder, salt, pepper and Liquid Smoke and cook together another 10 minutes.
  • Combine the"taco sauce" ingredients in a small bowl.
  • Assemble tacos: Fill taco shells with bacon-ground beef, then a drizzle of the taco sauce then shredded sharp cheddar cheese.
  • Heat in an oven or microwave until cheese is melted (has to be like a real cheeseburger, you know- LOL!), then add lettuce, tomato and onion.
  • Yum!

This makes a great weekend brunch, all ingredient amounts may be adjusted to taste, I also add in a pinch of cayenne pepper to the eggs, the baking powder will make the eggs very fluffy, you may omit if desired but I suggest to add it in, wrap the tortillas in foil and warm in the oven at 200 degrees F while making the eggs, serve the tortillas with salsa :)

2 tablespoons chile powder
1 tablespoon ground cumin
1 tablespoon brown sugar
2 teaspoons freshly ground black pepper
2 pounds slab bacon, cut into 1/4-inch slices
1 bunch green scallions, trimmed and cut into large pieces
1 jalapeño
1 to 2 limes
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon kosher salt, or to taste
Corn tortillas
Lime wedges
Pineapple salsa (see recipe)

Steps:

  • Heat oven to 450 degrees. Mix the chile powder, ground cumin, brown sugar and black pepper together in a large bowl, and then add the bacon slices, tossing to coat them with the spice mixture.
  • Arrange the coated bacon slices on a sheet pan, ideally one fitted with a wire rack. Roast in the oven until they are caramelized and starting to crisp at the edges, approximately 10 to 15 minutes. Remove pan from oven, chop the bacon into large dice and keep warm. Reserve the bacon fat for another use.
  • While the bacon cooks, make the crema. Put the scallions and jalapeño in a large dry sauté pan and cook over high heat, tossing occasionally, until the scallions and jalapeño have blackened at the edges, approximately 10 to 12 minutes.
  • Put the scallions and jalapeño in the bowl of a food processor, and blitz them with the juice of 1 lime, then add the sour cream and mayonnaise, and blitz the mixture until it is smooth and flecked with blackened bits. Season to taste with the salt and, if you'd like the mixture thinner, the juice of the second lime. Scrape into a bowl, and reserve.
  • To serve, warm the tortillas in the dry pan, one or two at a time, and reserve them in a tortilla warmer or clean dish towel. Fill them with the diced bacon and a slash of the crema, along with quartered limes and, if you like, salsa, cilantro, mint and hot sauce.

The creaminess of the mashed potatoes offsets the spiciness of the chipotle fried chicken and the roasted corn salsa completes the taco.

8 ounces chicken tenders, about 8 tenders
1 cup buttermilk
1/4 teaspoon kosher salt
1 tablespoon chipotle chile in adobo
1 cup flour
2 teaspoons taco seasoning
1 cup canola oil
5 pieces bacon
1 tablespoon bacon grease
2 tablespoons flour
1 1/2 cups whole milk
1/4 teaspoon kosher salt
1/8 teaspoon cracked black pepper
1 (5 ounce) can cooking spray
1 ear of corn, grilled
1 cup cherry tomatoes, seeds removed and chopped small
1 cup avocado, peeled, seeded and chopped small
1 tablespoon cilantro, chopped
1/4 teaspoon kosher salt

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
8 (6 inch) white corn tortillas
3 tablespoons canola oil

Steps:

  • To make the marinade, mix the buttermilk and chipotle peppers in a medium sized bowl and mix to combine. Add a ¼ teaspoon kosher salt. Add the chicken tenders and marinade in the refrigerator for 30 minutes. If you want spicier chicken, you can marinade up to 2 hours.
  • To make the roasted corn salsa, heat a barbecue grill or grill pan and heat to medium heat. Spray with a non stick cooking spray. Grill the corn on all sides until slightly charred but cooked through. Remove from the grill and cut the kernels off. In a small bowl, mix together the charred corn kernels, cherry tomatoes, avocado and a pinch of kosher salt and pepper and set aside.
  • To make the bacon gravy, heat a large sauté pan to medium heat. Add the bacon and cook until browned and cooked through on both sides. Remove the bacon to a paper towel lined plate to drain. Once drained and cool, chop the bacon into ½ inch pieces and set aside. Remove all but 1 tablespoon of bacon grease left in the sauté pan and heat the pan to medium heat. Add 2 tablespoons of flour to the pan. Cook the flour for about 2 minutes, stirring continuously. Slowly pour in the milk and whisk. Cook until the gravy thickens up, but not too thick, about 3-4 minutes. Add the kosher salt, pepper and the crisp bacon to the gravy and mix. Turn the heat off the stove but keep the gravy warm.
  • To fry the chicken, heat a cast iron skillet or large sauté pan to medium heat. Add 1 cup canola oil. Remove the chicken tenders from the marinade and drain. Discard the marinade. Put the flour and taco seasoning in a large zip lock bag. Put the chicken tenders in the flour mixture, close the top of the bag and shake so that the chicken tenders are fully coated with the flour mixture. Remove the tenders and put on a wire rack for 10 minutes to set up. Add the canola oil to a large frying pan and heat to medium-high heat. Test the oil by dropping in a few pinches of flour in the oil to see if it sizzles. When the oil is ready, put the chicken tenders in to fry. Cook for about 2-3 minutes on each side or until the tenders are light golden brown and cooked through. When done, remove the chicken tenders from the oil and put on a paper towel lined plate to drain. Lightly season with kosher salt.
  • Heat a sauté pan to medium heat and rub a little canola oil around the pan. Put one tortilla at a time in the pan and heat for about 30 seconds on each side, or until the tortilla has a little color. Put aside and keep warm.
  • Heat the mashed potatoes up by following the directions on the package. Keep warm.
  • To make the tacos, spread a nice helping of mashed potatoes on top of the warm tortilla and then put one chicken tender on top. Drizzle the bacon gravy on top. Top with the salsa and serve.
  • **If your chicken tenders are slightly larger than normal, cut the chicken tenders in half lengthways. Tenders on the taco should be just a little fatter than your index finger.
  • Makes 8 tacos or serves 4.

2/3 c water
1/2 c old el paso cheese 'n salsa dip
7 oz box old el paso hard and soft taco shells 6 flour+6 corn shells
1 1/2 c shredded lettuce
1 large seeded and chopped tomato
6 to 9 slice bacon, crispy cooked , crumbled

  • 1. In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5- to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in taco seasoning mix and water. Reduce heat to medium; cook 3 to 4 minutes, stirring frequently, until thickened. Stir in dip until well mixed. Heat taco shells and tortillas as directed on box. You can vary the ingredients to your particular tastes, and have at it. Easy/peasy to make... If you have your ingredients, you will have them...

PLAN/PURCHASE
1 small mini (street) flour tortilla, about 5-inches (12.5cm)
1 slice bacon, diced
1 large egg, whisked with a few drops of water
2 Tbsp sharp cheddar cheese, freshly shredded
1 Tbsp salsa, your choice
ADDITIONAL ITEMS
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients (mise en place).
  • 3. Place a rack in the middle position, and preheat the oven to 350f (175c).
  • 4. Drape the taco over the wire rack, and shape until the edges are pointing down. Cook until the tortilla begins to crisp, and holds its form. Remove from the oven, and reserve.
  • 5. Place a skillet over medium heat, and add the diced bacon.
  • 6. Cook to your desired crispness, then remove from pan, and drain on paper towels.
  • 7. Remove all but a teaspoon of grease from the pan, and add the whisked eggs.
  • 8. Scramble until almost cooked, then remove from the heat, add the bacon and combine.
  • 9. Chef's Note: Season with a bit of salt and pepper, if using.
  • 10. THE ASSEMBLY
  • 11. Add the salsa to the bottom of the taco. Stuff with the egg/bacon mixture. Top with the cheese. If you want the cheese melty (up to you), stick it under a broiler for about 20 seconds.
