BACON DEVILED EGGS

Bacon Deviled Eggs image

Deviled eggs with bacon and ranch dressing. Easy and tasty. I invented this recipe when I was looking for a new way to make deviled eggs. Week-old eggs peel easier than fresh eggs. You can use precooked bacon if you like.

MAPLE BACON DEVILED EGGS

Maple Bacon Deviled Eggs image

Provided by Katie Lee Biegel

Categories     appetizer

Time 1h35m

Yield 24 deviled eggs

Number Of Ingredients 13

Nonstick cooking spray, for the rack
4 pieces thick-cut bacon
1/4 cup maple syrup
1 tablespoon light brown sugar
1/2 teaspoon paprika
1/2 teaspoon cayenne powder, optional
12 large eggs
1 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon maple syrup
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • For the bacon: Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment paper and fit with a cooling rack. Spray the cooling rack with nonstick spray. Lay the bacon out on the rack in an even layer. Mix the syrup, sugar, paprika and cayenne, if using, in a small bowl. Brush on both sides of the bacon. Bake until golden but still pliable, about 15 minutes, then flip and bake until darker and crisp, another 15 minutes. (The bacon will continue to crisp as it rests.) Remove to a plate and allow to cool completely in a single layer. Chop and set aside.
  • For the eggs: Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When the eggs are cool enough to handle, remove the shells.
  • Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter. Process the yolks until it looks sandy. Add the mayo, Dijon, maple syrup, salt and pepper. Process until well blended and very smooth, about 1 minute, then transfer to a resealable plastic bag or piping bag. If using a resealable bag, use scissors to snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Sprinkle with the bacon and chives. Cover loosely and chill until ready to serve.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your dish. Look for eggs that are free-range and organic, and use high-quality bacon and cheese.
  • Hard-boil your eggs perfectly. This means cooking them until the yolks are firm but not overcooked. You can do this by placing the eggs in a single layer in a saucepan and covering them with cold water. Bring the water to a boil, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Drain the hot water and immediately run cold water over the eggs until they are cool to the touch. Peel the eggs and set them aside.
  • Make sure your bacon is crispy. This will add a nice smoky flavor to your dish. You can cook your bacon in a skillet over medium heat until it is browned and crispy. Drain the bacon on paper towels and set it aside.
  • Use a sharp knife to cut your eggs in half. This will help to prevent them from crumbling. Cut the eggs in half lengthwise and remove the yolks. Place the yolks in a small bowl and set the egg white halves aside.
  • Mash the egg yolks with a fork. Add the mayonnaise, mustard, salt, and pepper to the egg yolks and mash until they are smooth. You can also add other ingredients to your egg yolk mixture, such as chopped herbs, crumbled bacon, or grated cheese.
  • Stuff the egg white halves with the egg yolk mixture. Use a small spoon to carefully stuff the egg white halves with the egg yolk mixture. You can also use a piping bag fitted with a star tip to create a more decorative look.
  • Top the eggs with crumbled bacon and chives. This will add a nice finishing touch to your dish. Sprinkle the eggs with crumbled bacon and chopped chives. Serve immediately.

Conclusion:

Bacon-stuffed deviled eggs are a delicious and easy-to-make appetizer that is perfect for any occasion. They are sure to be a hit at your next party or gathering. With just a few simple ingredients, you can create a dish that is both flavorful and impressive. So next time you are looking for a quick and easy appetizer, give bacon-stuffed deviled eggs a try.
