Yield 8 people

Number Of Ingredients 7

1 pint cherry tomatoes
5 slices bacon, cooked until crisp, then chopped finely

Yield 16-20 servings

Number Of Ingredients 7

16 to 20 cherry tomatoes
1/2 lb. bacon, cooked and crumbled
1/2 cup mayonnaise
1/3 cup chopped green onion
3 tablespoons grated Parmesan cheese
2 tablespoons fresh snipped parsley
dash of freshly ground black pepper

Steps:

  • Cut a thin slice off each tomato top. Scoop out and discard pulp and seeds. Invert the tomatoes on paper towels or clean kitchen towel to drain. In a small bowl, combine all remaining ingredients; mix well. Spoon mixture into tomatoes. Refrigerate for several hours.

Tips:

  • Choose ripe, firm cherry tomatoes for the best flavor and texture. Avoid any tomatoes that are bruised or have soft spots.
  • If you are using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning.
  • To easily stuff the tomatoes, use a small paring knife to make a slit in the side of each tomato. Then, use a teaspoon to scoop out the seeds and pulp.
  • Fill the tomatoes with the bacon mixture, but do not overstuff them. Otherwise, they may burst when cooking.
  • If you want to make the tomatoes ahead of time, you can assemble them and store them in the refrigerator for up to 24 hours before cooking.
  • When cooking the tomatoes, make sure to cook them over medium heat so that the bacon has time to cook through without burning the tomatoes.

Conclusion:

Bacon-stuffed cherry tomatoes are a delicious and easy appetizer that is perfect for any occasion. They are also a great way to use up leftover bacon. With a few simple ingredients and a little bit of time, you can create a dish that will impress your friends and family. So next time you are looking for a quick and easy appetizer, give bacon-stuffed cherry tomatoes a try. You won't be disappointed!
