Provided by aronsinvest

Categories     Meat

Time 25m

Yield 12 mini-hamburgers, 6 serving(s)

Number Of Ingredients 13

3/4 lb ground chuck
3/4 lb ground sirloin
2 teaspoons minced garlic
1/4 cup minced onion
1 1/4 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon fresh ground black pepper
1/2 cup mayonnaise
2 tablespoons sour cream
3 tablespoons prepared horseradish
12 dinner roll-sized small brioche rolls, split in 1/2 crosswise
2 tablespoons melted butter, for brushing buns
6 slices bacon, cooked crisp, drained, and broken into 2-inch pieces

Steps:

  • In a mixing bowl, combine the chuck, sirloin, garlic, onion, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper and mix gently but thoroughly to combine. Using a 2-ounce ice cream scoop, divide the mixture into 12 scant 2-ounce balls of meat. Using your hands, shape to form small patties about 3 inches wide and 3/8-inch thick. Place on a plate and cover with plastic wrap. Allow to sit, refrigerated, at least 1 hour and up to overnight for flavors to mingle.
  • In a small bowl whisk together the mayonnaise, sour cream and horseradish and season with the remaining 1/4 teaspoon of salt and 1/8 teaspoon pepper. Place in a nonreactive bowl and refrigerate until ready to serve, up to 3 days in advance.
  • When you are ready to cook the burgers, preheat a grill to high and lightly butter the cut sides of the buns with the melted butter. Wrap the buns in aluminum foil and place on the coolest part of the grill to warm while you grill the burgers.
  • Grill the burgers about 2 minutes per side for medium. Transfer to the warmed buns and garnish with pieces of the crispy bacon. Spoon a dollop of the horseradish mayonnaise on top of the bacon, then place the top portion of the bun over all. Serve the sliders hot.

BACON SIRLOIN SLIDERS WITH CHIPOTLE MAYO

BACON SIRLOIN SLIDERS WITH CHIPOTLE MAYO image

Categories     Beef     Cheese

Yield 12 sliders

Number Of Ingredients 19

Sliders
■12 ounces fresh ground sirloin
■1/4 onion, sliced
■2 slices bacon
■1/2 teaspoon fresh basil, chopped
■1/2 teaspoon fresh oregano, chopped
■1/2 teaspoon fresh cilantro, chopped
■1/2 teaspoon canola oil
■2 tablespoons poblano chile, chopped
■salt and fresh ground black pepper
■12 fresh baked dinner rolls or small sandwich buns
Chipotle Mayo
■1 chipotle chile in adobo, minced
■1 cup mayonnaise
■1 tablespoon fresh cilantro, chopped
■1 teaspoon smoked paprika
■2 cloves garlic, minced
■2 tablespoons lemon juice
■1 tabelsoon of my Angel Dust seasoning

Steps:

  • Saute the bacon and onion over medium high heat until bacon is crisp and onions are caramelized. Remove from pan and chop both finely. In a bowl combine the meat, bacon, caramelized onion and pablanos. Season with salt, pepper and the three herbs. Form into small patties. Cook over medium high heat for 2 -4 minutes per side for medium rare. For chipotle mayo, in a bowl combine all ingredients and mix. Build the the little suckers, serve with chili cheese fries (of course) and gobble them down.

Tips:

  • Choose the right cut of steak. Sirloin is a good choice because it's flavorful and affordable. You can also use flank steak or skirt steak.
  • Slice the steak thinly against the grain. This will help it cook evenly and make it more tender.
  • Marinate the steak for at least 30 minutes. This will help to tenderize it and add flavor.
  • Cook the steak over high heat. This will help to sear the outside and keep the inside juicy.
  • Don't overcook the steak. Sirloin steak is best when it's cooked to medium-rare or medium.
  • Make the chipotle mayo ahead of time. This will give the flavors time to meld.
  • Serve the sliders on toasted buns with your favorite toppings. Some good options include lettuce, tomato, onion, and cheese.

Conclusion:

Bacon Sirloin Sliders with Chipotle Mayo are a delicious and easy-to-make party food. They're perfect for game day, potlucks, or any other casual gathering. With just a few simple ingredients, you can create a dish that everyone will love. So next time you're looking for a crowd-pleasing appetizer, give these sliders a try. You won't be disappointed!
