MINI QUICHES

Categories     appetizer

Time 1h45m

Yield 24 mini quiches

Number Of Ingredients 13

Nonstick cooking spray
2 1/2 cups all-purpose flour, plus more for dusting
Kosher salt
2 sticks (1 cup) cold unsalted butter, cubed
Up to 1/2 cup ice water
4 ounces thick-cut bacon, diced
3 large eggs
1/2 cup whole milk
1 cup crème fraîche
Ground white pepper
1/2 cup grated fontina cheese
2 tablespoons chopped fresh chives, plus more for garnish
1/2 cup cream cheese, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Place twenty-four 2 1/2-inch mini tart pans on a wire rack set in a rimmed baking sheet and spray with nonstick cooking spray.
  • In a food processor, combine the flour and a good pinch of salt and pulse to combine. Add the butter and pulse until the mixture resembles sand. Transfer to a medium bowl then slowly drizzle in enough of the ice water, folding with a wooden spoon, until the water is incorporated and a shaggy dough forms-all the water may not be needed; be careful not to overwork the dough. Turn the dough out onto a lightly floured work surface and form into a disc. Roll the dough to 1/4 inch thick and use a 3-inch round cutter to cut out 24 discs. Lay 1 disc in each prepared tart pan, pressing the dough firmly into the bottom and up the sides. Transfer to the freezer to firm up, about 30 minutes.
  • Meanwhile, heat a medium nonstick skillet over medium heat and add the bacon. Cook, stirring frequently, until browned and crispy, 3 to 5 minutes. Transfer the bacon to a paper towel-lined tray to cool for 5 minutes.
  • In another medium bowl, whisk together the eggs, milk, 1/2 cup of the crème fraîche and a pinch each of salt and white pepper. Transfer to a liquid measuring cup for easy pouring.
  • To assemble: Put a teaspoon of the bacon bits and a teaspoon of the fontina in the bottom of each tart shell. Top with a sprinkle of chives. You will have some bacon leftover to use as garnish. Pour the custard evenly into the tart shells and bake until the quiches are puffed and the crust is golden brown, about 35 minutes. Rotate the pan 180 degrees halfway through baking. Remove from the oven and immediately remove the quiches from the tart pans to cool on a wire rack. This will ensure a crisp crust.
  • Meanwhile, in a third medium bowl, combine the cream cheese, the remaining 1/2 cup crème fraîche and a pinch each of salt and white pepper. Whip with a hand mixer until light and airy, about 2 minutes. Dollop onto the cooled quiches and sprinkle with the remaining bacon bits and chives.

CARAMELISED ONION QUICHE WITH CHEDDAR & BACON

Caramelised onion quiche with cheddar & bacon image

Make quiche Lorraine to perfection every time with this easy recipe for a crisp pastry base and rich smoked bacon, cheese and thyme filling

Provided by Good Food team

Categories     Buffet, Dinner, Lunch, Main course, Supper

Time 1h25m

Yield Cuts into 6 - 8 slices

Number Of Ingredients 11

25g butter
2 large onions, halved and thinly sliced
1 tbsp fresh thyme leaves, plus a few sprigs
350g shop-bought shortcrust pastry
plain flour, for dusting
200g pack smoked bacon lardons
300g pot double cream
100ml milk
3 large eggs
2-3 pinches of nutmeg, plus extra for the top
140g mature cheddar, grated

Steps:

  • Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
  • Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
  • Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
  • Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
  • Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
  • Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

Tips:

  • Ensure the pastry is at a cold temperature before rolling it out. This will prevent the pastry from becoming too elastic and difficult to work with.
  • When pre-baking the pastry cases, prick the bottom with a fork to prevent the pastry from puffing up.
  • Use high-quality bacon and sausage for the best flavor. Thick-cut bacon is recommended for a more substantial bite.
  • Cook the bacon and sausage until they are crispy and well-browned. This will add flavor and texture to the quiche tarts.
  • Use a variety of vegetables in the quiche tarts, such as spinach, mushrooms, and bell peppers. This will add color, flavor, and nutrients to the dish.
  • Season the quiche tarts generously with salt and pepper. This will help to balance the richness of the bacon and sausage.
  • Bake the quiche tarts until the pastry is golden brown and the filling is set. This will take about 30-35 minutes.
  • Let the quiche tarts cool slightly before serving. This will allow the filling to firm up and the flavors to meld.

Conclusion:

Bacon sausage quiche tarts are a delicious and versatile breakfast or brunch dish. They are easy to make and can be customized to your liking. With a flaky pastry crust, a rich and savory filling, and plenty of cheese, these quiche tarts are sure to please everyone at the table. They are also a great way to use up leftover bacon and sausage. Serve them warm with a side of fruit or salad for a complete meal.
