Grilled Chicken with Rosemary and Bacon image

This recipe goes together so easy with minimal prep. Chicken breasts with garlic powder, bacon, and rosemary are grilled. What could be better? I'm always thinking up easy rosemary recipes, since my yard has 5 huge bushes of rosemary! Enjoy! Great with grilled vegetables and rice.

Time 26m

Yield 4

Number Of Ingredients 5

4 teaspoons garlic powder
4 skinless, boneless chicken breast halves
salt and pepper to taste
4 sprigs fresh rosemary
4 thick slices bacon

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Sprinkle 1 teaspoon garlic powder on a chicken breast and season with salt and pepper. Lay one rosemary sprig on the chicken breast. Wrap the bacon around the chicken to hold the rosemary on. Secure the bacon with a toothpick or an additional thick rosemary stem.
  • Cook the chicken breasts until no longer pink in the center and the juices run clear, 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Stay near the grill to combat any flare ups from the bacon. Remove the toothpicks before serving.

Yield 4 Servings

Number Of Ingredients 19

Vegetable oil
4 strips of bacon
4 skinless, boneless chicken breasts or 8 skinless, boneless chicken thighs
Salt and freshly ground black pepper
1 bunch of green onions
5 ounces cremini or black poplar mushrooms
2 garlic cloves
2 sprigs of fresh rosemary
2 (14-ounce cans) of chopped tomatoes
A good glug (about 1/2 cup) of Madeira (or red or white wine or chicken stock)
1 tablespoon harissa paste (you can get it from most supermarkets) or 3 tablespoons tomato purée
Pinch of dried oregano
1 dried bay leaf
11 ounces of your favorite pasta (I love to use penne or rigatoni)
1-2 teaspoons sugar (optional)
Pat of butter (optional)
Small handful of fresh basil or parsley leaves (optional)
Special equipment:
Large sauté pan, scissors, kettle, large saucepan with lid, colander

Steps:

  • Put a drizzle of oil into a large sauté pan on a high heat. Use scissors to snip the bacon into bite-size pieces. Add them to the pan once hot and fry for a couple of minutes, stirring every so often, until they are browned.
  • While the bacon cooks, season the chicken pieces well with salt and pepper.
  • Remove the bacon from the pan, leaving the fat behind, and set aside to drain on paper towels. Put the chicken in, top side down, reduce the heat to medium and leave to cook for about 4 minutes.
  • Meanwhile, trim and finely slice the green onions (both the green and the white bits) and mushrooms and peel and finely chop the garlic. Run your fingers down the length of the rosemary stalks to release their leaves and finely chop them too. Set everything aside.
  • The chicken pieces should now be golden brown underneath, so flip them over and leave to cook on the other side for about 3 minutes.
  • Once the chicken is golden brown, turn down the heat to low and add the prepared mushrooms, garlic and rosemary, along with the tomatoes, Madeira (or red or white wine or stock), harissa paste or tomato purée and oregano, and crumble in the bay leaf.
  • Give it a good stir and then leave to bubble away for 15-20 minutes, stirring from time to time so that it does not stick to the bottom.
  • When the chicken dish is about halfway through cooking, add the reserved cooked bacon and green onions, then put the kettle on. Use the boiled water to cook the pasta in a large saucepan according to the package's instructions. Once it is cooked, drain the pasta and then return it to the pan with the lid on to keep warm if necessary.
  • Check to see if the chicken is cooked-if the juices run clear, it is ready. Taste the sauce, adding a little sugar and/or a pat of butter if the sauce is still a bit acidic from the tomatoes. Add a drizzle of water if the sauce is too thick and let it bubble away for a bit longer if too thin.
  • Divide the pasta among four plates, top with a piece of chicken breast or two thighs, spoon some sauce over and scatter with some ripped-up basil or parsley leaves, if using.

BACON-WRAPPED ROSEMARY GARLIC CHICKEN WITH LEMON

Bacon-Wrapped Rosemary Garlic Chicken with Lemon image

Number Of Ingredients 6

1 chicken breast
4 slices turkey bacon (or thinly sliced deli ham will work too)
1 lemon zest
1 clove garlic, grated
2 sprigs fresh rosemary, finely chopped
1/3 cup white wine (I personally think its best with wine, but you can use water or low sodium chicken broth as an alternative)

Steps:

  • Slice chicken breast lengthwise so you create 2 cutlets
  • Cover each piece of chicken with a sheet of cling wrap and pound with a mallet until very thin (the cling wrap prevents chicken junk from flying everywhere and tearing up the chicken meat itself- basically less mess all around)
  • In a small bowl, combine lemon zest, rosemary, and grated garlic (this will be sort of pasty because the grate garlic makes things sticky)
  • On one side of each chicken cutlet, spread ½ the rosemary, garlic, lemon paste
  • Roll up each cutlet and wrap with 2 pieces of turkey bacon or ham. Secure with toothpicks
  • Season outside of chicken roll up with black pepper (and ½ tsp salt, optional, just to bring out chicken flavor a little)
  • Heat 1 tsp EVOO in a skillet over medium heat. Brown chicken on each side
  • Once browned, add wine to pan. Shake the pan a little while you are adding the wine and for about 30 seconds afterward.
  • Allow to simmer about 10 minutes until chicken is cooked through
  • Serve alongside your favorite steamed vegetables

Tips:

  • For crispy skin, pat the chicken dry before cooking and season it liberally with salt and pepper.
  • Use a combination of olive oil and butter for the best flavor. The olive oil will help to keep the chicken moist, while the butter will add a rich, golden-brown color.
  • Don't overcrowd the pan when cooking the chicken. This will prevent the chicken from cooking evenly.
  • Cook the chicken over medium-high heat for a few minutes per side, or until it is golden brown. Then, reduce the heat to medium-low and cook the chicken for an additional 15-20 minutes, or until it is cooked through.
  • To make the bacon-rosemary sauce, simply cook the bacon in a pan until it is crispy. Then, add the rosemary and garlic and cook for an additional minute. Finally, stir in the chicken broth and heavy cream and bring to a simmer.
  • Serve the chicken with the bacon-rosemary sauce and your favorite sides.

Conclusion:

This bacon-rosemary chicken is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is crispy on the outside and juicy on the inside, and the bacon-rosemary sauce is rich and flavorful. Serve this dish with your favorite sides for a complete meal that everyone will enjoy.
