1 cup Cheddar cheese ((shredded, divided))
5 cups Broccoli ((cut into florets))
1 lb Frozen spinach ((thawed, squeezed to drain well))

Steps:

  • Preheat the oven to 375 degrees F (191 degrees C).
  • If using frozen spinach, thaw and squeeze to drain first. If using broccoli, place it into a pot of water and bring to a boil. Simmer for 1-2 minutes until bright green.
  • Combine the chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the shredded cheeses in a large bowl. Stir until well incorporated. Transfer to a 9x13 in (23x33 cm) glass or stoneware casserole dish. 2 chicken breasts, each cut in half through the middle to make 2 thinner breasts
5 tablespoons butter, softened
1 tablespoon canola oil
Spicy mustard, for spreading
8 slices crusty French bread
Ranch dressing, homemade or bottled, for spreading
8 slices sharp Cheddar
8 slices cooked bacon

Steps:

  • Fry the chicken breasts in 1 tablespoon butter and the canola oil in a skillet over medium-high heat until done in the middle, about 8 minutes. Set aside.
  • To assemble the sandwiches, spread a generous amount of mustard on half of the bread slices. Spread a generous amount of ranch dressing on the other half. (Definitely be generous; when the sandwiches cook, these will turn into more of a "sauce.")
  • On the ranch-covered slices of bread, place a slice of cheese, a piece of chicken, 2 slices of bacon and a second slice of cheese. Top each with the mustard-covered slice of bread. Butter the outsides of the bread generously with the remaining 4 tablespoons butter, then grill in a panini maker. (If you do not have a panini maker, you can grill the sandwiches in a skillet, laying a heavy skillet on top of the sandwiches to press them together. Turn to grill the other side in the same way.)

1 cup ranch dressing, if desired

Steps:

  • Heat oven to 425°F. Line 13x9-inch pan with foil. Generously spray with cooking spray.
  • In shallow dish, mix Bisquick mix, dressing mix (dry) and paprika. In another shallow dish, mix egg and water. Dip chicken into egg mixture, then coat with Bisquick mixture. Place chicken in pan.

I do not remember where I found this recipe but it has been a favorite in my family for years. If you do not want to serve the Ranch Dressing as a dip just use the 1/4 cup of dressing called for in the directions before baking.

1/4 cup(s) bacon bits
1/3 cup(s) bread crumbs, seasoned
8 - chicken drumsticks
1 3/4 cup(s) ranch dressing

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Set aside.
  • Reserve 2 tbsp of the bacon bits.
  • On waxed paper combine the bread crumbs and remaining bacon bits. Brush drumsticks with 1/4 cup Ranch Dressing. Coat with crumb mixture.
