I made this last night from things in the pantry and fridge. I guess it's based loosely on Alamatriciana, though that has crisp bacon and no cream or herbs!

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, crushed
6 slices bacon, diced
1/2 cup white wine
dried red chili pepper flakes, to taste (I used about 1/2 teaspoon)
1 (700 ml) jar tomato sauce
1/2 cup water
1 teaspoon chicken stock powder
1/2 cup cream (I used light)
1 tablespoon chopped fresh basil
2 tablespoons chopped fresh parsley
fresh ground black pepper

Steps:

  • Heat the oil in a heavy based fry pan over medium heat.
  • Add the onion and cook for about 5 minutes, add the bacon and garlic, and cook for a further 5 minutes or until the bacon is cooked to your liking.
  • Pour in the wine, and allow to cook and reduce for a couple of minutes, then add the chilli flakes, tomato sauce, water and stock powder.
  • Simmer for about 15 minutes.
  • Add the cream and fresh chopped herbs and freshly ground black pepper, reheat and serve immediately over the pasta of your choice.
  • We ate this last night over spinach and cheese tortellini.

Steps:

  • In a medium saucepan, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is crisp, 8 minutes. With a slotted spoon, transfer bacon to a plate. 1/2 c sweet onion, sliced
2 clove garlic, minced
15 oz can of dice tomatoes w/oregano, basil & garlic, no salt added, pureed in food processor
2 slice bacon, diced
2 c mushrooms, sliced
1/4 stick unsalted butter
1/2 c parmesan cheese
1 lb dry pasta

Steps:

  • 1. Slice sausage links in 1/2" slices, place in skillet with diced bacon, onion and garlic and cook until browned. Drain off grease and add mushrooms, puree diced tomatoes, a few drops of lemon juice and a pinch of sugar and salt to taste. Allow to simmer for about 20 min.
  • 2. Cook pasta according to package directions. Drain pasta, add butter and stir until melted. Add 1/4 c parmesan and toss. Now add to sauce and toss well to coat. Garnish with Parmesan and Basil.

Steps:

  • This is another recipe with a really simple sauce, so before you start any really cooking you want to bring a large pot of salted water to a boil and drop your pasta. Make sure to reserve a cup or so of the cooking water. We started cooking the sauce as the water began to boil and the timing seemed to work out perfectly.
  • In a large, high-sided pan, melt the butter and olive oil together over medium heat. Toss the bacon into the pan with some pepper and cook until crispy and golden brown, about five minutes. Add the peas to the pan, stirring to combine. Give the peas a minute or two to defrost, then add the creme friache and mint. Stir until the creme friache has melted and coated everything nicely. Season with salt and pepper.
  • Drain the pasta and add it directly to the sauce pan. Pour the lemon juice over the pasta and stir everything to combine well, making sure the sauce coats each piece of pasta nicely. Finally, mix in the Parmesan cheese. Add some of the cooking liquid to thin out the sauce if desired (this is based totally on personal preference...we didn't add any water).

I was craving a good, warm, hearty pasta dish on the first cool day of Autumn. I came up with this by accident, just using what I had on hand. The 8oz. box of penne is a guess...I just know it was a regular size box of Mueller's penne...and I just used 1/2 of it!

3 boneless skinless chicken breasts
0.5 (8 ounce) box penne pasta
7 slices bacon
2 tablespoons chopped garlic
1/2 teaspoon white pepper
salt
onion powder
bay leaf
2 1/2 cups heavy cream
2 tablespoons flour
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Put chicken in pot with water and bay leaves. I used about 1 tablespoon of chopped dried bay leaves. Boil the chicken until done. I boil it low so it doesn't get tough and infuses the flavor of the dried bay leaves.
  • Meanwhile, fried the bacon low. When almost done, put 1 tablespoon of garlic in with it and about 1/2 teaspoon of onion powder. Take bacon and garlic up when the bacon is done - drain on paper towel. You will reserve one tablespoon or so of the grease, but dump the rest out. Add a little margarine to the bacon grease and then two tablespoons of flour (to make a paste). After the paste is made, slowly add cream while you are stirring. If you add it slowly, a little at a time, you can watch the sauce thicken and doesn't take as long over heat to thicken it. After the sauce is thickened, add a tablespoon of garlic, pepper and salt to taste. Reduce to low heat and stir frequently while you cook the 1/2 box of penne pasta (11 minutes till done). Drain pasta, put that in cream sauce. After chicken is done, chop it and mix that into the pasta and cream sauce. Mix together nicely and top with drained (chopped) bacon! Add some parmesan on top if you wish. Delicious! Serve with a salad.

  • Heat 2 tablespoons of olive oil until hot, in a large skillet . Add chicken and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked sides of the chicken with paprika and Italian seasoning. Flip the chicken over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm. To the same pan (but without chicken), add chopped tomatoes, spinach, garlic, crushed red pepper, 1/3 of the chicken (sliced into small strips) and half the bacon (it should be already cooked and drained of fat). Stir until well mixed. Add half and half and bring to boil, add grated Parmesan cheese: Reduce to simmer and stir, until the cheese melts and the sauce is creamy, only about 1 minute (at most 2 minutes). Remove from heat. Season with more crushed red pepper and salt, if needed. In the mean time, cook pasta according to package instructions. Add cooked pasta to the skillet with the sauce. 10 ounces mafalda pasta
3 tablespoons olive oil
1 onion, chopped finely
7 ounces lardons or 7 ounces smoked bacon
1 (14 ounce) can chopped imported Italian tomatoes, with liquid
12 sun-dried tomatoes packed in oil, drained and chopped
3 tablespoons parmesan cheese or 3 tablespoons romano cheese
