1 tablespoon snipped fresh thyme
1 tablespoon snipped fresh rosemary
0.25 cup unsalted butter, cut up
4 pound potatoes, peeled and finely sliced (about 12 cups)
Salt
Freshly ground black pepper
0.75 cup whole milk
0.75 cup whipping cream
3 tablespoon all-purpose flour
Snipped fresh rosemary and thyme

Steps:

  • Preheat oven to 325° F. Brush the bottom of a 3-quart rectangular or oval baking dish with the olive oil; set aside. Using a wide vegetable peeler, shave Parmesan into thin strips (about 4 cups); set aside.
  • In a small bowl combine bacon, green onion and chives. In prepared baking dish, place half the potatoes. Sprinkle with 1/2 tsp. each salt and freshly ground black pepper, half of the bacon mixture, and half the herbs. Top with half the Parmesan. Dot with half the butter. Repeat layers. In a small bowl whisk together whole milk, whipping cream, and flour; pour evenly over potatoes.
  • Bake, covered, for 1 1/2 hours. Increase temperature to 400°F. Bake, uncovered, for 15 to 20 minutes more or until potatoes are tender and top is golden brown. Makes 24 1/2 -cup servings.

4 lb potatoes, peeled, thinly sliced
6 slice bacon, cooked, crumbled
4 green onion, sliced
3 Tbsp minced, chives
2 1/2 Tbsp thyme, dried
2 tsp salt, divided
2 tsp pepper, divided
1 c parmesan cheese, shredded
2 c heavy cream
1 1/2 c milk
1/4 c flour

Steps:

  • 1. Preheat oven to 325 degrees F. Grease a 3 - 4 quart casserole dish. In a small bowl, combine, bacon, green onions, chives and thyme. Layer half of the potatoes in the prepared dish. Sprinkle with half of the salt and pepper. Top with half of the bacon-herb mixture. Sprinkle with half of the Parmesan cheese Repeat layers. In a medium bowl, whisk together cream, milk and flour. Pour over potatoes. I topped mine with extra shredded Parmesan. Cover and bake for 1 hour. Increase oven temperature to 400 degrees F. Uncover potatoes and bake for 20-25 minutes longer, until golden brown and bubbly. Enjoy!...I served these with smoked pork chops...delish!

1 cup mayonnaise
½ cup sour cream
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon seasoned salt

¾ cup crumbled cooked bacon
½ cup diced red onion
2 cups shredded American cheese
3 tablespoons grated Parmesan cheese
