4 slices thick-cut bacon, roughly chopped
1 medium onion, chopped
Two 15-ounce cans Great Northern, navy, cannellini or white beans
1/3 cup ketchup
1/3 cup dark brown sugar
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
1 teaspoon Worcestershire
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the bacon in a large, cold skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add 1 of the cans of beans with their liquid. Drain and rinse the remaining beans, then add them to the skillet. 6 slice smoked bacon
3 can(s) pork and beans, drained
1/2 c ketchup
1/2 c dark brown sugar, firmly packed plus 1 tablespoon for top
1/2 Tbsp prepared yellow mustard
3 or 4 drops of liquid smoke
1/8 tsp ground mustard

Steps:

  • 1. Fry 3 slices of the bacon until crispy, drain on paper towel and then crumble into a 2 quart casserole.
  • 2. Preheat oven to 375 degrees F and place rack in middle position.
  • 3. Pour beans into casserole dish with crumbled bacon.
  • 4. Add all remaining ingredients. except remaining 3 strips of uncooked bacon, and stir gently until combined.
  • 5. Cut bacon strips in half, arrange on top of beans, then sprinkle with 1 tablespoon brown sugar.
