SWISS, BACON, MUSHROOM MEATLOAF

Swiss, Bacon, Mushroom Meatloaf image

Swiss cheese with mushrooms & bacon is my favorite burger topping. So I thought why not make it a meat loaf. I had a lot of fresh herbs on hand so I used them but you could sub dry ones. I put a lot of vegetables in it and that keeps it moist. You can double it if you want very easily.

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 8

12 ounces bacon (diced)
4 medium white mushrooms (chopped)
1 small onion (finely chopped)
1 1/2 lbs extra lean ground beef
1 egg
1/4 cup evaporated milk or 1/4 cup half-and-half cream
6 ounces shredded swiss cheese
1/2 cup corn flake crumbs

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, cook bacon until crisp but not burned.
  • Remove with a slotted spoon to paper towels to drain and cool. Remove all but a tablespoon of the bacon fat from the
  • skillet and saute the mushrooms and onions until tender.
  • Allow to cool slightly.
  • In a large bowl, mix the beef, egg, and milk. Add the
  • mushroom/onion mixture, all but a few spoonfuls of the
  • swiss cheese and all but one tablespoons of the bacon
  • bits. Add the corn flake crumbs and mix well until blended.
  • Shape into a loaf and place in a large loaf pan.
  • Bake at 350 for about an hour, or until cooked through.
  • Drain fat from the pan and sprinkle the reserved cheese
  • and bacon on top. Bake an additional 5 minutes, or until
  • cheese is bubbly.
  • Allow to rest for 10 minutes before slicing. Yield: 4 to 6
  • servings.

Tips:

  • Choose the right ground beef: Use a blend of 80% lean and 20% fat ground beef for a moist and flavorful meatloaf. If you prefer a leaner meatloaf, you can use a blend of 90% lean and 10% fat ground beef.
  • Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Shape the meatloaf into a loaf pan: Use your hands to shape the meatloaf mixture into a loaf shape. Place the meatloaf in a loaf pan that is just large enough to hold it.
  • Bake the meatloaf at a high temperature initially: This will help to create a nice crust on the meatloaf. After 15 minutes, reduce the oven temperature to 350 degrees Fahrenheit and continue to bake for 1 hour or until the meatloaf is cooked through.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10 minutes before slicing. This will help the juices to redistribute throughout the meatloaf and make it easier to slice.

Conclusion:

This bacon mushroom Swiss meatloaf is a delicious and easy-to-make recipe that is perfect for a weeknight meal. The combination of bacon, mushrooms, and Swiss cheese makes this meatloaf moist and flavorful. Serve this meatloaf with mashed potatoes, green beans, and a side of gravy for a complete meal.
