1 pound bacon strips, chopped
1 package (16 ounces) elbow macaroni
1/4 cup all-purpose flour
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 paprika, optional
2 cans (12 ounces each) evaporated milk
2 cups reduced-sodium chicken broth
8 ounces process cheese (Velveeta), cubed
2 cups shredded cheddar cheese

Steps:

  • Fold two 18-in.-long pieces of foil into two 18x4-in. strips. Line perimeter of a 4-qt. slow cooker with foil strips; spray with cooking spray., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels, reserving drippings. In same skillet, heat 2 tablespoons bacon drippings over medium heat; cook pasta in drippings 2 minutes or until edges turn translucent. Transfer to slow cooker., In same skillet, heat 1/4 cup bacon drippings over medium heat. Add flour, garlic powder, onion powder and, if desired, paprika. Cook and stir 1-2 minutes or until flour begins to turn pale golden brown. Gradually whisk in milk and broth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in cheeses; transfer to slow cooker. Stir in pasta. Cook, covered, on low 2-3 hours or until pasta is tender. Top with bacon.

I looked to see if there were any Crockpot mac & cheese for the Crockpot;and was surprised to see so many..but none like this one I made yesterday..I hope you like it..my family loved it..

16 oz package uncooked elbow macaroni
1/2 c light processed cheese,cubed
2 c shredded cheddar cheese
1/2 c colby jack cheese
1/2 tsp garlic powder with parsley
1/4 c chopped onion
1/8 tsp pepper
3 Tbsp butter
1 pkg pre-cooked bacon, cut up with scissors
3 c 2% milk

Steps:

  • 1. Spray inside of Crockpot with non-stick cooking spray. Combine uncooked pasta,cheeses, garlic,pepper and butter.
  • 2. Cut up bacon into microwave safe bowl..
  • 3. Cook bacon for 30 seconds, stir, cook for 20 seconds. drain on paper towel then add to Crockpot.
  • 4. Pour milk over all and stir to combine.Cover and cook on LOW for 2 hours, stirring every 20 minutes. After last stirring leave cover off and add cracker crumbs,if desired. Make sure pasta is tender and mixture is moist.

1/2 lb uncooked macaroni (I used a 1/2 bag of Trader Joe's Brown Rice fusilli) or 1/2 lb hearty pasta (I used a 1/2 bag of Trader Joe's Brown Rice fusilli)
4 cups milk (I used skim cow's)
1 egg (Alison's recipe calls for 2. I only had one in the house because we had company over the weekend and)
4 cups shredded cheese (I used all cheddar)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried mustard
6 slices bacon (optional)

Steps:

  • Spray crock well with cooking spray. In a mixing bowl, whip egg and milk together. Stir in spices.
  • Add cheese and noodles, and stir well to combine. Pour the mixture into the crock pot.
  • It will be very liquidy.
  • Cover and cook on low for 2-5 hours, or on high for 1-3. The cooking time will vary depending on what size crockpot you are using, and how quickly it heats and cooks. I was quite surprised at how quickly our pasta got fork-tender.
