Provided by Alton Brown

Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 9

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

For individual portion follow the above method.

GRANDMA'S WILTED LETTUCE WITH HOT BACON DRESSING

Grandma's Wilted Lettuce with Hot Bacon Dressing image

When my Grandma Hallie passed in 1984, I mourned MANY things about this wonderful woman. But it wasn't until the next spring, when leaf lettuce came up, that I realized I had never asked her how to make Wilted Lettuce. Over the next 30 years, I would try one recipe after another, but none of them were quite right until a lovely...

Provided by Fran Miller

Categories     Salads

Time 45m

Number Of Ingredients 12

FOR HOT BACON DRESSING:
3 slice bacon
1/4 c sugar
1 Tbsp flour
1/2 tsp salt
dash black pepper
1/3 c apple cider vinegar
3 Tbsp water
FOR WILTED LETTUCE
large bowlful of leaf lettuce
some chopped onion
2 hardboiled eggs, optional

Steps:

  • 1. If you are making Wilted Lettuce, put the eggs on to cook, then wash the leaf lettuce carefully. I remove all hard parts, like the spine, of the leaves. Put the leaves in a salad spinner to remove the excess water, or allow the leaves to drain in a colander lined with paper towels. Chop some onion and set aside. When the eggs have cooked about 15 minutes in boiling water, drain the water, and refill the pan with cool water to allow the eggs to cool. Assemble the lettuce leaves and chopped onion in a large salad bowl. Chop the eggs and set aside. THEN prepare the Hot Bacon Dressing.
  • 2. Fry the diced bacon until crispy, then remove the bacon to a paper towel to drain. Reserve about 1 1/2 Tablespoons of bacon grease in the skillet and remove the rest.
  • 3. While the diced bacon is frying, stir together the sugar, flour, salt, and pepper in a small bowl.
  • 4. Add the sugar mixture to the 1 1/2 Tablespoons of hot bacon grease, cooking over medium heat and stirring.
  • 5. Add the vinegar and water and stir constantly, bringing it to a boil. Boil about 2 minutes, until slightly thickened. (If too thick, add a little water.)
  • 6. Remove from heat and cool until warm. Pour over lettuce & onion, tossing the salad until coated and wilted. (The hotter the dressing, the more it will wilt. Your call.) Top with the chopped hardboiled eggs and crispy diced bacon. Dinner is served! =^..^=

  • Add the vinegar, sugar, mustard, oil, salt, pepper, and bring to a boil.
  • Pour over spinach and toss to combine.
  • Sprinkle with reserved bacon pieces and serve immeadiately.

Tips:

  • Choose high-quality bacon: The quality of the bacon you use will greatly impact the flavor of the dressing. Look for bacon that is thick-cut and has a good amount of marbling.
  • Cook the bacon until it is crispy: This will help to render out the fat and give the dressing a rich, smoky flavor.
  • Use a variety of vinegars: Different vinegars will give the dressing different flavor profiles. For a classic bacon dressing, use white vinegar or apple cider vinegar. For a more tangy dressing, use balsamic vinegar or red wine vinegar.
  • Add some sweetness: A little bit of sugar or honey will help to balance out the acidity of the vinegar and give the dressing a more well-rounded flavor.
  • Season the dressing to taste: Once you have combined all of the ingredients, taste the dressing and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

Conclusion:

Bacon dressing is a versatile and delicious condiment that can be used on a variety of dishes. It is perfect for salads, sandwiches, and even grilled meats. With its smoky, tangy, and slightly sweet flavor, bacon dressing is sure to please everyone at your table. So next time you are looking for a new and exciting way to dress up your favorite dishes, give bacon dressing a try. You won't be disappointed!
