Time 30m

Number Of Ingredients 15

4-5 mahi mahi fillets (4-6 oz. each, 1-inch thick )
2 tablespoons olive oil
1 tablespoon unsalted butter
3 tablespoons flour
1 tsp EACH garlic powder, onion powder, salt, paprika
1/2 teaspoon pepper
3 tablespoons minced shallots
3-4 cloves garlic (minced)
1 1/4 cups low sodium chicken broth
1/2 cup heavy cream
1 tablespoon cornstarch
1/2 tsp EACH dried parsley, dried thyme
2 tablespoons lemon juice (more or less to taste)
salt and pepper to taste
freshly chopped chives

Steps:

  • Mix together all of the Spice Rub ingredients in a medium bowl. Pat mahi mahi dry and rub spices into the fish.
  • Melt 1 tablespoon butter in 2 tablespoons olive oil over medium-high heat in a large heavy bottom skillet. Once hot, add fillets, turn heat down to medium and cook approximately 4 minutes, flip fillets over, then cook an addition 2-4 minutes to your liking (it will depend on thickness,; mahi-mahi should reach an internal temperature of 137°F). If fish is browning too quickly, then turn down the heat. Remove mahi mahi to a plate and tent with foil.
  • If needed, drain oil from skillet so you are left with about 1 tablespoon oil. Add shallot and sauté while scraping up the drippings for 2 minutes or until softened. Add garlic and sauté 30 seconds.
  • Whisk chicken broth with cornstarch and add to skillet along with heavy cream, lemon juice, thyme and parsley. Simmer until reduced by half and slightly thickened, about 4-5 minutes. Season with salt and pepper to taste (I use about 1/4 teaspoon each) and add additional lemon juice if desired.
  • Nestle mahi mahi fillets back into the skillet and spoon sauce over the fillets. Garnish with fresh chives and/or parsley (optional). Serve immediately with rice, mashed potatoes or pasta.

MAHI MAHI ROCKEFELLER

Mahi Mahi Rockefeller image

A twist on the classic Oysters Rockefeller. My family loves Oysters Rockefeller and I wanted a main meal that would be available any time of the year. It became a hit that is requested frequently. This is also good with tuna or other firm white fish. Excellent served with twice baked potatoes and steamed green beans.

Time 1h5m

Yield 4

Number Of Ingredients 12

1 pound bacon
4 (6 ounce) mahi mahi fillets
1 pinch garlic salt, or to taste
1 pinch ground black pepper, or to taste
1 tablespoon butter
6 green onions, chopped
3 cloves garlic, chopped
1 (10 ounce) package frozen chopped spinach, thawed and well drained
2 dashes hot pepper sauce, or to taste
¼ cup evaporated milk, plus more as needed
2 cups shredded Monterey Jack cheese
½ cup shredded Parmesan cheese

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, then chop. Set aside. Season mahi mahi with garlic salt and pepper. Heat a skillet over medium heat. Cook mahi mahi until it flakes easily, 10 to 15 minutes. Remove from skillet and place each filet on a baking dish.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • While the fish is cooking, melt the butter in a separate skillet. Stir in the green onions, garlic, and spinach. Cook and stir until heated through, 2 to 3 minutes. Stir in the chopped bacon, hot pepper sauce, and evaporated milk. Bring to a low simmer, then add the Monterey Jack cheese a little at a time until fully melted. Stir in more evaporated milk, if needed, to create a sauce. Divide the spinach mixture evenly over each mahi mahi fillet. Sprinkle with Parmesan cheese.
  • Broil in the preheated oven until the cheese has melted and is lightly browned, 3 to 5 minutes more.

MAHI MAHI WITH BACON-TOMATO BUTTER RECIPE - (4.6/5)

Mahi Mahi with Bacon-Tomato Butter Recipe - (4.6/5) image

Provided by á-175897

Number Of Ingredients 11

2 cups water
1 tablespoon fine sea salt
2 teaspoons sugar
4 (6-ounce) Mahi Mahi fillets
Cooking spray
1/8 teaspoon table salt
1 slice center-cut bacon, finely chopped
1 garlic clove, thinly sliced
1/4 teaspoon hot smoked paprika
2 plum tomatoes, seeded and diced
2 tablespoons butter

Steps:

  • Combine water, sea salt and sugar in a shallow dish, stirring until sea salt and sugar dissolve; add fish. Let stand 20 minutes. Drain; pat dry. Prepare charcoal fire in a chimney starter; let coals burn for 15 to 20 minutes or until flames die down. Carefully pour hot coals out of starter, and pile them onto one side of the grill. Coat grill grate with cooking spray; put grate in place over coals. Sprinkle 1/8 teaspoon table salt evenly over fish. Lightly coat fish with cooking spray. Place fish, skin side down, over direct heat on grill rack coated with cooking spray; grill 2 minutes or until well marked. Turn fish over and move to indirect heat; grill 12 minutes or until desired degree of doneness. Heat a small skillet over medium heat; add bacon to pan. Cook 5 minutes or until bacon is almost crisp, stirring occasionally. Add garlic; cook for 2 minutes, stirring frequently. Add paprika, and cook for 20 seconds, stirring constantly. Add tomatoes, and cook for 3 minutes. Stir in butter. Remove from heat. Place 1 fillet on each of 4 plates; top each serving with about 2 tablespoons tomato mixture.

Tips:

  • For the best results, use fresh mahi-mahi fillets. If you can't find fresh mahi-mahi, frozen fillets will also work, but be sure to thaw them completely before cooking.
  • To make the bacon crunch topping, simply cook bacon in a skillet until crispy, then drain on paper towels and crumble.
  • For the cream sauce, whisk together mayonnaise, sour cream, Dijon mustard, and lemon juice until smooth. Season with salt and pepper to taste.
  • To assemble the dish, place the mahi-mahi fillets on a baking sheet lined with parchment paper. Top with the bacon crunch topping and cream sauce. Bake in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until the mahi-mahi is cooked through.
  • Serve the mahi-mahi with your favorite sides, such as rice, roasted vegetables, or a salad.

Conclusion:

Bacon Crunch Topped Mahi-Mahi with Cream Sauce is a delicious and easy-to-prepare dish that is perfect for a weeknight meal. The combination of crispy bacon, creamy sauce, and flaky fish is sure to please everyone at the table. So next time you're looking for a quick and tasty seafood recipe, give this one a try.
