4 large flour tortillas
8 oz cream cheese, softened
1 oz package dry ranch seasoning
8 oz cheddar cheese, shredded
1 lb bacon, chopped and cooked

Steps:

  • Chop bacon into ½-1 inch pieces, and cook in a skillet over medium heat, stirring often, until done.
  • Scoop bacon out onto a plate lined with a paper towel, and blot the grease with more paper towels.
  • In a small bowl, combine cream cheese and ranch seasoning, stir very well.
  • Lay out a tortilla, and spread ¼ of cream cheese mixture on the entire tortilla.
  • Sprinkle 2 oz shredded cheddar cheese on the entire tortilla.
  • Sprinkle ¼ of the bacon pieces on the entire tortilla.
  • Roll the tortilla up, and place on a baking sheet.
  • Repeat steps 4-7 until you have filled all 4 tortillas.
  • Refrigerate for 1-2 hours, then cut into 1-2 inch sections.
  • Set pinwheels upright, and form into circles.
  • Chill until ready to serve.

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square.
