Steps:
- For the meatloaf: Preheat the oven to 375 degrees F.
- In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery and garlic and cook, stirring often, until the vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
- In a large bowl, combine the sauteed vegetables, ground beef, chorizo and green chiles.
- In a medium bowl, combine the salt, cumin, black pepper, cayenne and eggs. Add the ketchup and sour cream. Mix well with a fork, then pour it on top of the meat mixture. Sprinkle with the breadcrumbs and mix thoroughly with clean hands.
- Put the mixture into a loaf pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
- For the salsa-glaze: Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until softened, 3 to 4 minutes. Stir in the tomato puree, sugar, mustard, green chiles and chipotle chile. Bring the mixture to a simmer over medium-low heat. Cook until slightly thickened, 5 to 6 minutes. Season with salt to taste.
- Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf, garnish with fresh cilantro if desired and serve.

SMOTHERED MEATLOAF
Steps:
- Place potatoes in the bottom of a 5-quart slow cooker.
- In a large bowl, combine ground beef, ground pork, shake and bake, onion soup mix, sliced jarred mushrooms, and egg. Set aside.
- In a small bowl, stir together 1/2 cup Cheddar soup and evaporated milk. Add to meat mixture. Using a wooden spoon or clean hands mix thoroughly and form into a loaf. Place in slow cooker on top of the potatoes. Make sure meatloaf does not touch the sides of the slow cooker.
- Stir together remaining cheddar soup with cream of mushroom soup. Pour over meatloaf. Top with onions and sliced fresh mushrooms.
- Cover and cook on HIGH setting for 1 hour. Reduce the temperature to LOW setting and cook for an additional 5 to 6 hours.
Tips:
- To achieve the best flavor, use a combination of ground beef and ground pork in your meatloaf. This will create a moist and flavorful texture.
- Don't be afraid to experiment with different seasonings and spices in your meatloaf. A blend of chili powder, cumin, and paprika is a great place to start.
- For extra flavor, wrap the meatloaf in bacon before baking. The bacon will help to keep the meatloaf moist and add a delicious smoky flavor.
- Before smothering the meatloaf in sauce, allow it to cool slightly. This will help the sauce to adhere better to the meatloaf.
- If you don't have a Dutch oven, you can also bake the meatloaf in a regular baking pan. Just be sure to add a little extra water or broth to the pan to prevent the meatloaf from drying out.
Conclusion:
This bacon-chorizo-chipotle smothered meatloaf is a delicious and hearty dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a satisfying and flavorful meal, give this recipe a try.
