3 slices bread, torn into small pieces
1/2 cup milk
1 1/2 lb lean (at least 80%) ground beef
8 slices bacon, crisply cooked and crumbled
1 cup finely shredded sharp Cheddar cheese (4 oz)
1/4 cup dill pickle relish
1/2 cup finely chopped onion
1 clove garlic, finely chopped
1 egg, slightly beaten
1/3 cup ketchup
1 tablespoon packed brown sugar

Steps:

  • Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
  • In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.

6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. 2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup.   • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.

2 lb ground beef
1 medium yellow onion, diced
2 clove garlic, minced
1 c saltine crackers, crushed (ritz works well too)
1 tsp onion powder
1 tsp garlic powder
1 tsp montreal steak/burger seasoning
1-2 pinch black pepper
3 Tbsp dill pickle relish or chopped dill pickles
2 Tbsp heinz 57 sauce
1 Tbsp yellow mustard
1 Tbsp worcestershire sauce
2 eggs
2-3 Tbsp heavy cream or milk
1/2 c cheddar cheese, shredded
3-4 slice bacon, chopped & fried crisp
1 1/2 c catsup

Steps:

  • 1. In skillet on stovetop fry bacon pieces until crisp, remove from pan and drain on paper towels. In a large mixing bowl gently fold together all ingredients except catsup.
  • 2. Spray medium rectangle baking dish or loaf pan with nonstick spray.
  • 3. Squirt or "frost" meatloaf with catsup. I probably use more than 1/4 C as you can see in the photo.
  • 4. Bake at 350 degrees for 1 hour 20 minutes. About 1/2 way through baking time I try to use a turkey baster to remove the grease that has cooked out of the ground beef dish during the baking process.
  • 5. For the "Deluxe" I serve this meatloaf with a side salad made with iceberg lettuce, sliced tomato & thin sliced raw onion. It really does taste like a Deluxe Bacon Cheeseburger.

⅓ cup ketchup
2 tablespoons prepared yellow mustard
1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
2 eggs, beaten
¼ cup dry bread crumbs
¼ cup mayonnaise
1 tablespoon Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (3 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble into a large bowl.
  • Mix ketchup and mustard in a bowl.

1 cup panko breadcrumbs
1/2 cup 2% low-fat milk
6 tablespoons ketchup, divided
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon Worcestershire sauce
1 large egg
1 tablespoon brown sugar
8 ounces mild cheddar cheese, shredded
1 lb bacon, uncooked

Steps:

  • Preheat oven to 350°F.
  • In a large bowl combine beef, bread crumbs and milk. Pouring milk directly over bread crumbs. Add 2 tablespoons ketchup, Worcestershire and steak seasoning. Set aside.
  • In a small bowl, crack egg and beat it slightly. This helps prevent overworking the meat while combining, resulting in a tougher meatloaf. Add egg to large bowl with meat mixture. Combine well with hands, do not overwork the meat mixture.
  • Gentle press meatloaf into bowl and divide in half. Place first half into 7x10" baking dish and form into a flat meatloaf Gently press the center in to create a rim around the outside of the meatloaf. Add shredded cheese i nto the center of the meatloaf.
  • Form remaining half of meatloaf in the bowl into a size similar to the meatloaf in the pan. Set op top and press the sides together to seal in the cheese. Form into a loaf shape about 1½ - 2" tall.
  • You may notice cracks in the loaf. Run your hands under warm water and then across the meatloaf to smooth the cracks out. Set meatloaf aside.
  • In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar. Mix well with a fork. Apply glaze evenly all over your meatloaf (except the bottom).
  • Arrange bacon slices over the top of the meatloaf. Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side. Arrange remaining bacon over the top. Tuck the ends of the bacon under the meatloaf (this prevents curling).
  • Place meatloaf in the oven and bake until bacon is crispy, about 1 hour.
  • Remove from oven. Allow to rest uncovered for 20 minutes. Serve and enjoy!
