Time 25m

Yield 6-8 waffles

Number Of Ingredients 15

1/2 cup sweetcorn
1 tablespoon butter
1 1/2 cups flour
1 1/2 cups cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
1 cup whole milk or 1 cup 2% low-fat milk
2 eggs
1 egg white
1/3 cup melted margarine
1/2 cup crumbled cooked thick-cut bacon
1/2 cup grated cheddar cheese

Steps:

  • Melt butter in small skillet and saute corn for 3 minutes.
  • Set aside.
  • Sift together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  • Slowly add the buttermilk, milk, eggs and melted margarine.
  • Gently stir until combined but not smooth.
  • Fold in the bacon, corn and cheddar.
  • Cook in waffle maker.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the waffles will be. Look for fresh, flavorful bacon, sharp cheddar cheese, and good-quality waffle mix.
  • Don't overmix the batter: Overmixing the batter will make the waffles tough. Mix just until the ingredients are combined.
  • Cook the waffles in a hot waffle iron: A hot waffle iron will help the waffles cook evenly and prevent them from sticking.
  • Don't overcrowd the waffle iron: Overcrowding the waffle iron will prevent the waffles from cooking evenly.
  • Serve the waffles immediately: Waffles are best served hot and fresh out of the waffle iron.

Conclusion:

Bacon cheddar waffles are a delicious and easy-to-make breakfast or brunch dish. They're perfect for a lazy weekend morning or a special occasion. With just a few simple ingredients, you can create a hearty and flavorful meal that the whole family will love. So next time you're looking for a new breakfast recipe, give bacon cheddar waffles a try. You won't be disappointed!
