3 russet potatoes
5 cups vegetable oil, for frying
6 ounces thick cut applewood smoked bacon
3 tablespoons butter
2 tablespoons minced onion
2 teaspoons minced garlic
3 tablespoons all-purpose flour
1 tablespoon garlic chili sauce (recommended: Sriracha)
1 tablespoon Dijon mustard
3 cups heavy cream
1 cup Parmigiano-Reggiano
2 cups sharp white Cheddar
1/4 cup chopped chives, for garnish

Steps:

  • 1. Cut potatoes lengthwise in 1/4-inch squares. Soak cut potatoes in water for 1 hour to remove starch. Heat oil to 325 degrees F and blanch potatoes for 5 minutes until very soft but not brown. Remove from oil. Drain on paper towels.
