Categories     Breads

Time 20m

Yield 6 biscuits, 6 serving(s)

Number Of Ingredients 12

1 1/4 cups self-rising flour
3/4 cup cake flour
3/4 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons unsalted butter, very cold
4 slices bacon, rendered and small diced
1/3 cup shredded cheddar cheese
2 tablespoons chopped green onions
1 1/4 cups heavy cream
1/4 cup all-purpose flour
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 475°F Sift the self-rising flour, cake flour, baking powder, baking soda, sugar and salt into a large bowl. Using your fingers or a pastry cutter, work the 4 tablespoons cold butter into the flour until the pieces are pea size.
  • Add the bacon, cheddar and green onions to the flour mixture. Pour the heavy cream into the flour mixture and, with your hands or a silicone spatula, stir just until the cream and flour come together to form a dough.
  • Use 2 tablespoons of the melted butter to brush the inside of the Cast-Iron Biscuit Pan (Emeril has his own line, but I think any biscuit pan would work). Carefully spoon mixture into each well being sure to divide the mixture evenly between all wells. This will ensure even baking. Gently smooth each top with the back of a spoon or spatula. Brush the tops with the remaining tablespoon of melted butter.
  • Bake in the oven for 10 or 12 minutes, or until golden brown. Allow to cool briefly before running a thin, sharp, small blade around the edge of the biscuit pan and inverting the pan to release the biscuits.

Categories     Breads

Time 25m

Yield 8-10 snack size portions

Number Of Ingredients 10

2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
5 tablespoons cold unsalted butter, cut into pieces (can use Tillamook brand)
5 slices bacon, cooked crisp and crumbled
1/3 cup chopped dried apricot
3/4 cup tillamook smoked cheddar cheese, shredded & chilled
3/4 cup buttermilk (can use Tillamook brand)

Steps:

  • Preheat oven to 425 degrees F.
  • In a large electric mixer with paddle attachment, combine the flour, baking powder, sugar, salt, and white pepper.
  • Add cold butter pieces and mix until flour mixture has a coarse meal texture.
  • Add the bacon, apricots, and smoked cheddar cheese and mix until well-combined.
  • On low speed, gradually add the buttermilk and mix until a dough is formed.
  • Turn the dough out onto a lightly-floured board and gently knead 8 times.
  • Pat or roll out the dough to 1-inch thick, and use a biscuit or cookie cutter to cut the biscuits (re-gathering and re-rolling as necessary to use up the dough).
  • Place on a lightly-greased and floured baking sheet, and bake at 425 degrees F on the middle oven rack for 15 minutes and biscuit tops are golden.

Tips:

  • Use cold butter: This will help to create flaky layers in the biscuits.
  • Grate the cheese: This will help it to distribute evenly throughout the biscuits.
  • Don't overwork the dough: Overworking the dough will make the biscuits tough.
  • Chill the dough for at least 30 minutes before baking: This will help the biscuits to hold their shape.
  • Bake the biscuits in a hot oven: This will help them to rise quickly and evenly.

Conclusion:

Bacon cheddar biscuits are a delicious and easy-to-make snack or side dish. They are perfect for parties, potlucks, or just a quick bite to eat. With just a few simple ingredients, you can have a batch of these tasty biscuits ready in no time. So next time you are looking for a quick and easy snack, give bacon cheddar biscuits a try.
