SEVEN LAYER SALAD

Seven Layer Salad image

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

Tips:

  • To save time, use pre-riced cauliflower or broccoli rice. You can also rice the vegetables yourself using a food processor or grater.
  • If you don't have a bacon-flavored cooking spray, you can use regular cooking spray and add a teaspoon of bacon bits to the salad.
  • To make the salad more substantial, add some cooked protein, such as grilled chicken, shrimp, or tofu.
  • If you like a sweeter dressing, add a tablespoon of honey or maple syrup to the vinaigrette.
  • For a tangier dressing, add a tablespoon of lemon juice or vinegar to the vinaigrette.
  • Serve the salad immediately, or store it in the refrigerator for up to 3 days.
