TRADITIONAL SCOTTISH CAULIFLOWER AND BACON SOUP

Traditional Scottish Cauliflower and Bacon Soup image

Bacon can add a great flavour to bland cauliflower in the recipe below. Ingredients below are sufficient for around four people.

Provided by Elmotoo

Categories     Pork

Time 35m

Yield 4 serving(s)

Number Of Ingredients 8

one pint vegetable stock (600ml or Two and a half cups)
half pint milk (300ml or One and a quarter cups)
1 large onion (chopped)
8 slices bacon (chopped)
2 tablespoons vegetable oil (2 1/2 US tablespoons)
2 medium potatoes (chopped)
1 small cauliflower, cut into florets
salt and pepper

Steps:

  • Fry the onion and bacon in oil for 2-3 minutes. Stir in the potatoes, cauliflower and stock and bring to the boil. Cover and simmer for fifteen minutes or until tender. Liquidize the soup and then add milk. Reheat gently and season to taste. As an added touch, you can grill a couple of rashers of bacon until crisp; crush and sprinkle on top of the soup in the plate before serving.

Tips:

  • Choose the right cauliflower: For the best flavor and texture, choose a head of cauliflower that is dense and heavy for its size, with tightly packed florets. Avoid heads with any signs of bruising or discoloration.
  • Roast the cauliflower before adding it to the soup: Roasting the cauliflower brings out its natural sweetness and adds a depth of flavor to the soup. Be sure to roast the cauliflower until it is tender and slightly caramelized.
  • Use a good quality bacon: The bacon is one of the main flavors in this soup, so it's important to use a good quality bacon that you enjoy the taste of. Look for bacon that is thick-cut and has a good amount of marbling.
  • Don't be afraid to experiment with different seasonings: This soup is a great base for experimenting with different seasonings. Try adding a pinch of cayenne pepper for a little heat, or a sprinkle of smoked paprika for a smoky flavor.
  • Serve the soup with your favorite toppings: This soup is delicious on its own, but it's also great with a variety of toppings. Try adding a dollop of sour cream, a sprinkle of crumbled bacon, or a few chives.

Conclusion:

This easy and delicious bacon cauliflower soup is a great way to warm up on a cold day. It's also a great way to get your daily dose of vegetables. The roasted cauliflower gives the soup a rich and creamy texture, while the bacon adds a smoky flavor. This soup is sure to be a hit with the whole family.
