1 teaspoon baking soda
1 teaspoon kosher salt
7 cups caramel corn
8 ounces good semisweet chocolate, chopped into chunks

Steps:

  • In a large skillet, fry the bacon over medium heat until crisp, 8 to 10 minutes. Remove to a paper-lined plate to cool, then finely chop. Set aside.
  • In a large bowl with an electric mixer, cream the butter together with the brown sugar and granulated sugar until it's nice and combined. Add the vanilla and eggs and beat until smooth, scraping the bowl if necessary to make sure everything is incorporated.
  • In a separate bowl, combine the flour, coffee granules, baking soda and salt. Stir together, then add it to the butter mixture in 3 increments, mixing on low after each until it's totally incorporated. Scrape the bowl and beat for a few more seconds.
  • Crush 3 cups of the caramel corn in a bag with a rolling pin. Stir by hand into the dough with the chocolate chunks and chopped bacon. Crush the remaining 4 cups caramel corn and transfer to a work surface.
  • Line 2 baking sheets with silicone baking mats. Scoop 2-tablespoon portions of the cookie dough and roll into balls. Roll the balls in the crushed caramel corn, then place on the prepared baking sheets and flatten slightly. Refrigerate for 15 minutes.

  • Preheat your oven to 250º.

1/4 cup pure maple syrup
1/4 cup heavy cream
1/4 teaspoon kosher salt
4 tablespoons unsalted butter
One 17.25-ounce box puff pastry
1 tablespoon ground cinnamon
1 1/2 cups chopped pecans

Steps:

  • Preheat the oven to 400 degrees F. Place a 12-cup muffin tin on a baking sheet lined with parchment paper. Line 2 additional baking sheets with aluminum foil.
  • Lay the bacon slices on the baking sheets lined with foil. Bake until almost crispy, but not quite done, about 18 minutes. Remove the bacon to a paper towel-lined plate. Pour the bacon fat into a small pot. Once the bacon is cool, crumble into small pieces.
  • Place the pot over medium-low heat. Add 1 cup brown sugar and cook, whisking frequently, until the sugar is dissolved, about 3 minutes. (The mixture will look granular.) Slowly stream in the maple syrup and whisk vigorously as the mixture begins to bubble. Once syrup comes together, add the cream and kosher salt. Remove from the heat and whisk until all of the cream is incorporated. Reserve until ready to use.
  • Melt the butter in a small saucepan over medium-low heat. Unfold both sheets of puff pastry and arrange the sheets so that the fold lines run parallel to the counter edge. Generously brush the sheets with the melted butter. Combine the remaining 1/2 cup brown sugar with the cinnamon in a small bowl. Sprinkle the sugar mixture evenly over the buttered sheets. Sprinkle 1/2 cup crumbled bacon and some of the chopped pecans over the pastry. Gentle press the bacon and nuts into the sugar mixture with your palms. Roll the pastry away from you, forming 2 tight logs. Use a serrated knife to cut each log into 6 equal pieces.

1 lb bacon
1/4 cup uncooked popcorn
1 tablespoon bacon fat
1 cup dry roasted peanuts
1 1/4 cups granulated sugar
1/2 cup plus 2 tablespoons corn syrup
1/2 cup water

Steps:

  • Pre Heat Oven to 375. Lay bacon out on a baking sheet and cook until the fat has rendered and the bacon is crispy, about 10 to 15 minutes.
  • Reserve the rendered fat and set the bacon aside.
  • Reduce the oven to 350 degrees.
  • In a large pot, place 1 tablespoon of the reserved bacon fat and the popcorn. Put a lid or heat proof bowl on top (unless you want popcorn all over your kitchen). Cook over medium heat, shaking the pot intermittently until the popcorn slows to 1 pop every two or three seconds. Remove from heat and pour the popcorn into a bowl. (if you'd like to use air popped or microwave popcorn, that will work as well. Make sure it's a "natural" kind without the artificial butter flavor. 2 bags of microwave popcorn will give you more than enough for 8 cups.).
  • Wipe out the popcorn pot, making sure there is residue and add the water, then the corn syrup and sugar. Cook on medium high heat, until the mixture turns a light amber color, about 6 to 8 minutes. You do not want to over cook the caramel.
  • While the caramel cooks, spread the popcorn onto a baking sheet lined with a silicone mat, or parchment paper (if using parchment paper, make sure it fully lines the baking sheet or the caramel corn will stick.).
  • Sprinkle the peanuts evenly over the sheet. Crumble the cooled bacon over the popcorn and peanuts. You want the bacon to be in small pieces. Season the popcorn with a generous pinch of salt. (If you are using microwave popcorn that is salted, omit this step).
  • Once the caramel is light amber, drizzle it evenly over the sheet of popcorn, scraping the pot with a heatproof spatula. Immediately stir the popcorn mix and caramel to coat. The caramel will start to harden and not fully coat everything, that's ok, you just want to get the process started.
  • Place the sheet in the oven and bake for thirty minutes, stirring the corn every 8 to ten minutes. When you stir the corn, make sure to scrape the caramel off the silicone mat and turn it over to coat.
  • Once fully coated, remove from the oven and break the clusters apart with a fork, or your hands.
  • Let fully cool. Once cool the caramel corn will store for a week in an airtight container protected from humidity.

FOR THE BACON BISCOTTI
1 3/4 c all purpose flour, sifted
1 1/2 c light brown sugar
1/2 c chopped pecans
1/2 c chopped dates
1/4 c unsalted butter, at room temp
1/2 c old fashioned rolled oats
6 slice thick cut applewood bacon (+ reserved fat from cooking)
2+ whole eggs plus 1 egg white
3 Tbsp crystalized ginger, crushed
1/2 tsp baking powder
1/2 tsp baking soda
1 Tbsp pure vanilla extract
1/2 tsp saigon cinnamon
1/2 tsp cardamom (optional)
FOR THE MAPLE CARAMEL
1/2 c unsalted butter
2 Tbsp granulated sugar
3 Tbsp maple syrup
1 Tbsp milk
1 tsp roasted ground ginger
1/2 tsp pure vanilla extract
pinch sea salt

Steps:

  • 1. In a thick bottom skillet or cast iron pan, cook the bacon until crispy. Remove bacon from pan and chop coarsely; reserve bacon fat (should yield approx ¼ cup). Set aside.
  • 2. With a mortar and pestle, grind the crystallized ginger into powder. Set aside.
  • 3. In a large mixing bowl, beat butter and sugar until sugar starts to dissolve. Add the ginger and eggs and continue whisking until airy. Add the vanilla extract to the mix. Add the cinnamon; whisk in. Pour in the bacon fat (1/4 cup).
  • 4. Add the baking powder, baking soda and ½ of the flour; stir until incorporated. Add in the chopped pecans, dates and the cooked bacon. Stir to incorporate. Add in the remaining flour and stir to incorporate. Cover the dough with plastic wrap (directly against to keep out air) and refrigerate 2 hours.
  • 5. Preheat oven to 360 degrees. Remove the dough from the refrigerator and form into two long logs. Place on cookie sheet or rack covered with parchment paper. Press the dough logs to approximately 1 ½ inch high by 4 inches wide. (The logs will extend approximately 12-14 inches in length or to within an inch or two of the edges of your cookie sheet).
  • 6. Bake at 360 degrees for 30 minutes (or until lightly browned and slightly firm.) Remove from oven and let cool 2-3 minutes. Using a bread knife or other serrated knife slice both logs on the bias into individual cookies about one inch in width per piece. Note: Keep a wet towel handy and wipe the knife blade after each cut to keep the cookies uniform and aid in making clean cuts. Separate the cookies to allow air flow and return to oven to bake for another 20-25 minutes. Remove from oven and allow to fully cool.
  • 7. To make the caramel, melt the butter and sugar over low heat in a small, heavy bottom saucepan. Add the maple syrup, ground ginger, vanilla extract & pinch of sea salt. Continue to cook over low heat, stirring constantly with a whisk or spoon. When the mixture starts to foam, add in the milk and continue stirring and cooking approximately 7 minutes. The caramel will bubble lightly as it reduces and thickens. Test for viscosity by dipping the back of a metal teaspoon in the mixture... if it sticks to the spoon, but still glides off, it's ready. Note: The caramel will continue to thicken as it cools, so you should immediately coat the cookies. Using a teaspoon gently pour the caramel over the cookies in a back and forth motion, forming streaks of caramel across the cookies. The caramel will be sticky, so do not stack the cookies. Refrigerate or set aside in a cool place until service. Cookies can be stored in a single stack in a plastic storage container.

3 oz. bar mik chocolate, finely chopped

  • 1. Preheat oven to 425. line a baking sheet with foil and top with a rack.
  • 2. For bacon, thread a strip of bacon onto each skewer; put on prepared rack. Cook bacon 10 minutes, flip and cook til crisp, 10 to 15 minutes more. transfer to paper towel lined baking sheet.
  • 3. For caramel, boil brown sugar, butter and corn syrup in small pan 1 minute. Whisk in 2 Tbsp. cream and boil 1 minute more. Removes caramel from heat; let cool 10 minutes.
  • 4. For ganache, heat 3 Tbsp. heavy cream til it boils. pour over chocolate in a bowl. Let the chocolate sit 5 minutes to soften. Stir til smooth.
  • 5. Spoon caramel over one side of each bacon skewer; chill til caramel is set. Spoon ganache over caramel; let excess drip back into the bowl. Chill bacon til ganache is set.
