Time 1h10m

Number Of Ingredients 17

8 slice bacon, diced
12 oz boneless, skinless chicken breast
1 1/2 tsp cajun seasoning (i use tony chachere's)
1 Tbsp butter
1 Tbsp olive oil
1 c long grain white rice
2 c water
1 tsp salt
1 c onion, diced
4 c broccoli florets, chopped in small pieces
2 clove garlic, minced
2 can(s) ro-tel tomatoes and gr. chiles (10 oz)
2 Tbsp butter
2 Tbsp flour
1 c chicken broth
1 c shredded cheddar - sharp
1/2 tsp salt & pepper, each

Steps:

  • 1. Place diced bacon in very large skillet or dutch oven and heat to med. high. Cook until crisp, stirring as needed - about 10 min.
  • 2. While bacon cooks, dice chicken into bite-sized pieces, and season generously on both sides with Cajun seasoning. When bacon is crisp, remove to plate with slotted spoon. At this point, if bacon has not created enough grease to cover bottom of pan, add butter and olive oil as needed.
  • 3. Add chicken to skillet in single layer, and cook for 5 minutes, flipping once to brown evenly. Remove chicken to plate with bacon.
  • 4. While chicken browns, combine rice, water and salt in separate saucepan and bring to boil. Cover and reduce heat to low, and simmer for 14 minutes. Then remove from heat.
  • 5. Meanwhile, add onion and broccoli to hot skillet, and cook over med. high heat, stirring occasionally, until broccoli is tender and onions are caramelized - about 10 minutes. Add in garlic, and cook just until fragrant - about 30 seconds. Top with tomatoes, rice, chicken and bacon and stir to combine. Reduce heat to keep warm.
  • 6. Melt butter in small saucepan and whisk in flour until just combined. Add chicken broth and stir will. Cook on high til thickened and bubbly. Remove from heat and add cheese, salt and pepper. Stir until cheese is melted, then pour into skillet with chicken and rice.
  • 7. Stir well to combine and serve.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling around the kitchen.
  • Choose the Right Rice: Use long-grain rice or basmati rice for this recipe. These types of rice have a light and fluffy texture that pairs well with the other ingredients.
  • Cook the Rice Properly: Rinse the rice thoroughly before cooking. This will help remove any starch and prevent the rice from becoming sticky. Cook the rice according to the package instructions.
  • Use High-Quality Bacon: Choose thick-cut bacon for the best flavor and texture. Look for bacon that is evenly marbled with fat.
  • Cook the Bacon Properly: Cook the bacon over medium heat until it is crispy. This will help render out the fat and give the bacon a delicious flavor.
  • Choose Fresh Broccoli: Look for broccoli that is bright green and has tightly closed florets. Avoid broccoli that is wilted or has yellowed florets.
  • Cook the Broccoli Properly: Blanch the broccoli in boiling water for 1-2 minutes, then immediately transfer it to an ice bath to stop the cooking process. This will help the broccoli retain its bright green color and crisp texture.
  • Use a Quality Chicken Breast: Choose boneless, skinless chicken breasts that are evenly thick. This will help ensure that the chicken cooks evenly.
  • Season the Chicken Properly: Season the chicken with salt, pepper, garlic powder, and onion powder. This will add flavor to the chicken and help it brown nicely.
  • Cook the Chicken Properly: Cook the chicken over medium heat until it is cooked through. This will help prevent the chicken from becoming dry.
  • Assemble the Dish Properly: Once all the ingredients are cooked, combine the rice, bacon, broccoli, chicken, and sauce in a large bowl. Stir until well combined.

Conclusion:

This bacon broccoli chicken rice is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The combination of flavors and textures is sure to please everyone at the table. With a few simple tips, you can make this dish even better. So next time you are looking for a quick and easy meal, give this bacon broccoli chicken rice a try. You won't be disappointed!
