- In a large skillet, cook diced bacon until browned and cooked through. Place bacon on a paper towel lined plate to drain excess grease.
- Cut or tear bread into small cubes. Spray a 9x13 casserole dish with non-stick cooking spray.
- Place bread cubes in the casserole dish. Sprinkle half of the bacon pieces over the bread.
- In a bowl, whisk together eggs, milk, half and half, vanilla, sugar and cinnamon. Pour mixture over bread and bacon. Cover the dish and refrigerate for 2 hours up to overnight.

- Grease a 9x13 baking pan with nonstick cooking spray. Spread bread into pan. In a separate bowl, combine eggs, milk, whipping cream, brown sugar, maple syrup, extract and cinnamon and whisk well.
- Gently pour egg mixture over pieces of bread. Press bread into liquid to soak up. Sprinkle bacon on top. Cover and refrigerate for 2 hours or overnight. Remove from refrigerator 30 minutes before cooking.
- Preheat oven to 350 and bake, uncovered, for 40-50 minutes or until a knife stuck in the center comes out clean and top is golden brown. Cooking time varies according to your oven - please check towards the end of the process. Let stand for 5 minutes before serving.
