AVOCADO TOAST WITH BACON AND MAPLE
I first tried this from a recipe by I'mPat, but have come to see that to really add the little bit of umami, a tiny smear of vegemite on the bread is in order. But be warned- use vegemite in very small quantities because it is powerful schtuff.

Tips:
- Choose ripe avocados: Ripe avocados are easier to mash and spread, and they have a creamier texture.
- Use good quality bacon: Thick-cut bacon is best for this recipe, as it will hold up better when cooked.
- Cook the bacon until it is crispy: This will give the toast a nice smoky flavor.
- Use a good quality bread: A hearty bread, such as sourdough or whole wheat, will hold up better under the toppings.
- Don't be afraid to experiment with different toppings: In addition to avocado and bacon, you could also try adding a fried egg, tomato slices, or crumbled cheese.
