Yield Serves 4

Number Of Ingredients 8

5 slices of lean bacon, chopped fine
2 tablespoons minced shallot
1/2 cup finely chopped apple
2 tablespoons cider vinegar
1 1/2 cups unpasteurized apple cider
1 teaspoon Dijon-style mustard
1 tablespoon olive oil
1 pound fresh spinach, coarse stems discarded and the leaves washed well and spun dry

Steps:

  • In a large skillet cook the bacon over moderate heat, turning it, until it is crisp, transfer it to paper towels to drain, and discard all but 2 tablespoons of the fat. In the fat remaining in the skillet cook the shallot and the apple over moderate heat, stirring, for 1 minute, add the vinegar, the cider, and salt and pepper to taste, and boil the mixture, stirring occasionally, for 8 to 10 minutes, or until it is reduced to about 1/2 cup. Whisk in the mustard, the oil, and salt and pepper to taste. In a large bowl toss the spinach with the warm dressing until it is just wilted and sprinkle the salad with the bacon.

6 slices bacon, cooked crisp
1 lb fresh spinach leaves, washed & stems removed
1 apple, unpeeled, cored and sliced
3 green onions, thinly sliced
1/4 cup salted sunflower seeds or 1/4 cup toasted sliced almonds
3 tablespoons white wine vinegar
1 teaspoon sugar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil or 1/4 cup salad oil

Steps:

  • Crumble bacon. Toss with spinach, apples, and onions in salad bowl.
  • In small bowl, whisk together vinegar, sugar, mustard, salt and pepper. Whisk in the oil until well blended.
  • Just before serving, drizzle dressing over salad, tossing well. Sprinkle with nuts.

Tips:

  • When choosing bacon for this salad, opt for a thick-cut variety that will hold up well when cooked. You can use regular or smoked bacon, depending on your preference.
  • To save time, you can use pre-cooked bacon. Just be sure to blot it dry with paper towels before adding it to the salad.
  • Use a variety of apples in this salad for a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Gala.
  • If you don't have spinach on hand, you can use another leafy green such as arugula, kale, or romaine lettuce.
  • To make a simple dressing for this salad, whisk together olive oil, vinegar, salt, and pepper. You can also add a touch of honey or maple syrup for sweetness.
  • For a more flavorful salad, try grilling the apples before adding them to the salad. This will bring out their natural sweetness.
  • This salad can be served as a main course or a side dish. It's also a great option for a potluck or picnic.

Conclusion:

Bacon, apple, and spinach salad is a delicious and healthy dish that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new salad recipe, give this one a try!
