Time 50m

Yield 4 serving(s)

Number Of Ingredients 10

2 tablespoons vegetable oil
3 bacon, rashers thinly sliced
1 large onion, thinly sliced (200g)
2 cloves garlic, crushed
2 medium zucchini, coarsely grated (240g)
2 medium carrots, coarsely grated (240g)
1/2 cup self-raising flour
3 eggs, lightly beaten
1 cup grated cheese
2 tablespoons chili sauce

Steps:

  • Grease a 19cm square cake pan (or similar sized round pan), line base with baking paper.
  • Heat oil in large pan, add bacon, onion and garlic, cook, stirring until onion is soft.
  • Add vegetables and cook, stirring, about 5 mins or until any liquid is evaporated; cool.
  • Combine vegetable mixture with sifted flour and remaining ingredients in a medium bowl; mix well.
  • Spread mixture into prepared pan.
  • Bake in moderate oven for about 30 mins or until firm.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Choose good quality ingredients: The better the quality of your ingredients, the better your dish will taste. Look for fresh, seasonal vegetables and high-quality bacon.
  • Don't overcrowd the pan: When cooking the bacon and vegetables, make sure not to overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam rather than fry.
  • Cook the bacon until it's crispy: Crispy bacon is the best bacon, so make sure to cook it until it's nice and crispy. This will also help to render out some of the fat, making the bacon less greasy.
  • Use a variety of vegetables: Don't be afraid to use a variety of vegetables in your slice. This will add flavor and color to the dish. Some good options include bell peppers, onions, zucchini, and mushrooms.

Conclusion:

Bacon and vegetable slice is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to use up leftover bacon and vegetables, and it's also a good option for a quick and easy lunch or dinner. With a little planning and preparation, you can have a delicious and healthy meal on the table in no time.
