BACON AND TOMATO PASTA

BACON AND TOMATO PASTA image

Categories     Pasta

Yield 6-8 people

Number Of Ingredients 12

2 tablespoons kosher salt
16 ounces spaghetti pasta
1 lb. thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
¼ cup red wine
4 tablespoons basil, chiffonade
¼ cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente. In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine. Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

Tips:

  • Choose the right pasta. For this recipe, a short pasta like penne or shells works best.
  • Cook the pasta al dente. This means that the pasta should be cooked until it is tender but still has a slight bite to it.
  • Use good quality bacon. Thick-cut bacon is best for this recipe, as it will add more flavor to the dish.
  • Don't overcrowd the pan. When cooking the bacon, make sure to leave some space between each piece so that it can cook evenly.
  • Drain the bacon grease. Once the bacon is cooked, remove it from the pan and drain the grease. This will help to keep the dish from being too greasy.
  • Use fresh tomatoes. Roma tomatoes are a good choice for this recipe, as they are meaty and have a sweet flavor.
  • Season the sauce to taste. Add salt, pepper, and garlic powder to the sauce until it reaches your desired flavor.
  • Serve the pasta immediately. This dish is best served hot, so make sure to serve it as soon as it is finished cooking.

Conclusion:

This bacon and tomato pasta is a quick and easy weeknight meal that is sure to please the whole family.
