Time 40m

Yield 8 serving(s)

Number Of Ingredients 7

6 slices bacon
1/4 cup apple cider vinegar
4 lbs tiny new potatoes (about 1 1/2 inches around)
3 celery ribs, chopped
1 cup coarsely chopped scallion top
1/4 cup sour cream
2 tablespoons mayonnaise

Steps:

  • Cook bacon in a large skillet until crisp. Transfer to paper towels to drain. Carefully pour fat from skillet into a measuring cup and reserve. Coarsely crumble the bacon.
  • Pour vinegar into a large bowl. Put potatoes in a 5-quart pot, covered with cold water by 2 inches, and simmer, uncovered, until just tender - about 20 minutes. Drain potatoes in a colander and rinse slightly with cold water. When cool enough to handle, quarter potatoes, adding them to the bowl as you cut, tossing them to coat. Add 1 TBSP of reserved bacon fat and remaining ingredients, and salt and pepper to taste, tossing to combine well.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or red potatoes, hold their shape better than starchy potatoes, such as Russet potatoes, making them ideal for potato salad.
  • Cook the potatoes properly: To prevent the potatoes from becoming mushy, boil them in salted water until they are tender but still firm. Drain the potatoes and let them cool slightly before slicing them.
  • Use a flavorful dressing: A good potato salad dressing should be both creamy and tangy. Use mayonnaise, sour cream, or yogurt as the base and add vinegar, mustard, and herbs for flavor.
  • Add mix-ins: Potato salad is a great way to use up leftover vegetables, meat, and cheese. Some popular mix-ins include bacon, scallions, celery, hard-boiled eggs, and cheese.
  • Chill the potato salad before serving: This will help the flavors to meld and the salad will be more refreshing.

Conclusion:

Potato salad is a classic summer dish that is perfect for potlucks, picnics, and barbecues. With so many variations to choose from, there's sure to be a potato salad recipe that everyone will enjoy. So next time you're looking for a side dish that is both delicious and easy to make, give potato salad a try.
