BACON-PARMESAN BRUSSELS SPROUTS

Bacon-Parmesan Brussels Sprouts image

I never thought I liked brussel sprouts until I was given this very old recipe. It's delicious and may just change your mind about Brussel sprouts! *It's not a good idea to add salt to this recipe, as the bacon and parmesan cheese are already salty enough. I've substituted broccoli and/or cauliflower for the sprouts and they are also delicious prepared in this way. The only change I make is that I generally use a microwave steamer to cook the broccoli and cauliflower.

Tips:

  • Choose fresh and firm Brussels sprouts: Look for Brussels sprouts that are bright green in color and have tightly closed leaves. Avoid any sprouts that are yellowing or have brown spots.
  • Trim the Brussels sprouts properly: Cut off the bottom stem and remove any wilted or damaged outer leaves.
  • Parboil the Brussels sprouts before roasting: This will help them cook evenly and prevent them from becoming dry or tough.
  • Use high-quality bacon: The flavor of the bacon will really shine through in this dish, so it's important to use a good quality brand.
  • Don't overcrowd the baking sheet: Make sure to spread the Brussels sprouts and bacon in a single layer on the baking sheet so that they cook evenly.
  • Roast the Brussels sprouts until they are caramelized and tender: This will take about 20-25 minutes, depending on the size of the sprouts.
  • Garnish with fresh herbs and Parmesan cheese: This will add a pop of color and flavor to the dish.
