Yield 6

Number Of Ingredients 9

4 slices bacon, cut into 1/2-inch pieces
3 tablespoons vegetable oil
5 medium green onions, chopped (1/3 cup)
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons white or cider vinegar
8 oz fresh spinach leaves (9 cups)
2 hard-cooked eggs, sliced

Steps:

  • In 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels. Drain all but 3 tablespoons bacon drippings from skillet (if fewer than 3 tablespoons remain, add enough vegetable oil to drippings to equal 3 tablespoons).
  • Add oil, onions, sugar, salt and pepper to drippings in skillet. Cook over medium heat 2 to 3 minutes, stirring occasionally, until onions are slightly softened. Stir in vinegar.
  • Place spinach in very large bowl. Pour warm dressing over spinach; toss to coat. Arrange egg slices on top. Crumble bacon and sprinkle on top. Serve immediately.

BACON AND EGG SALAD

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

6 slices bacon
6 hard-boiled large eggs, peeled and chopped
1/4 cup mayonnaise
1 tablespoon minced fresh chives
1 tablespoon stone-ground mustard
1 lemon, juiced
Kosher salt and freshly ground black pepper
1 ripe avocado, sliced, optional
1 Roma tomato, sliced, optional
4 croissants, lightly toasted, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • To cook the bacon using the "Mauro Method," line a baking sheet with parchment, overlapping each side 1 to 2 inches. Put the bacon on the parchment and bake until crisp and brown, about 20 minutes. This way, the fat will fry the bacon to a perfect crisp but not come in contact with the metal pan, creating a mess. Drain the bacon on paper towels and let cool. (Once the fat is cooled, use or just toss it. No mess!)
  • Crumble the bacon into a bowl. Gently mix in the eggs, mayonnaise, chives, mustard and lemon juice. Season with salt and pepper.
  • Eat alone, or build sandwiches with avocados and tomatoes on toasted croissants.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your salad. Look for crisp bacon, ripe tomatoes, and tender lettuce.
  • Don't overcook the bacon: Overcooked bacon can be tough and chewy. Cook it until it's just crispy around the edges.
  • Use a variety of textures: The combination of crispy bacon, soft-boiled eggs, crunchy vegetables, and creamy dressing creates a delicious and satisfying salad.
  • Dress the salad just before serving: This will help to prevent the salad from getting soggy.
  • Season the salad to taste: Add salt, pepper, and any other desired seasonings to your taste.

Conclusion:

Bacon and egger dinner salad is a classic for a reason. It's a delicious, satisfying, and easy-to-make meal that's perfect for any occasion. Whether you're looking for a quick lunch or a hearty dinner, this salad is sure to please. So next time you're looking for a tasty and nutritious meal, give bacon and egger dinner salad a try.
